Rajasthani Gatte Ki Sabzi with step wise pictorial and video method.
“GATTE” means “Dumplings“.
This Gatte ki sabzi is a traditional vegetarian dish from Rajasthan (India) in which Gram flour dumplings are cooked in spicy tomato and/or curd/yoghurt based curry.
There are many variations of making this recipe with respect to its base. Some make it without tomatoes and curd only, whereas it is also cooked with the mix of tomatoes and curd.
This is one of the best recipe when you have no other vegetables to cook or otherwise you are interested in eating something unique and different.
HOW TO STORE GATTE FOR LONG TIME?
Although this is bit time taking recipe but with few tips, you can make it quickly. All you need to prepare the Gatte in advance and put in refrigerator for a week.
But in case you want to keep them for more longer period, then put them in ziplock bag or freezer safe container and deep freeze for 3 to 4 months.
All you need to bring them and put in the curry.
AN INSTANT PROCESS
Traditionally Gatte ki sabji is made in a pan. For that Gatte needs to be cooked separately. For cooking gatte, add sufficient water in a pan in which all gatte can immerse well. Do this process before cutting the gatte. Boil them for 5-7 minutes or until you see them floating over the water. Take them out and cut into pieces. Now it’s your choice either to add them directly in curry or fry first.
But here in this recipe, you need not to cook gatte separately. Use of pressure cooker makes the things easy as you need not to go through the boiling process. Just 3 whistles and you are done.
STEP WISE PICTORIAL RECIPE OF BESAN KE GATTE
FOR MAKING GATTE
- Take a bowl and add the ingredients mentioned for making Gatte.
- Knead it into a dough using water.
- Make a log by rolling the dough on a clean surface.
- Cut the log into small pieces and keep aside. If you like, you can deep fry them.
MAKING OF GRAVY
5. Add oil in a pressure cooker. If using mustard oil, then it needs to be cooked till smoking point.
6. Then add cumin, turmeric powder, red chili powder and coriander powder. Make sure oil is not too hot while adding spices otherwise they will burn quickly.
7. Add tomatoes, green chili and ginger in a grinder jar.
8. Make a puree and add it to the cooker. Also add salt because it fastens the pace of tomatoes cooking.
9. Cook by stirring at intervals for 5-7 minutes or until tomatoes begin to leave the sides of cooker.
10. Whisk curd, gram flour and water in a bowl and add to the cooker by stirring simultaneously, otherwise curd may curdle.
11. When curd begins to boil, add gatte.
12. Close the lid of pressure cooker and let them cook upto 3 whistles.
13. Open the lid when pressure is released and add garam masala and coriander leaves. Mix.
Besan ke Gatte are ready. Enjoy.

Equipment
- Pressure Cooker
Ingredients
1 cup = 200 ml
FOR GATTE
- 1/2 cup gram flour/Besan
- 1/4 tsp cumin seeds
- 1/4 tsp carom seeds (roughly crushed)
- 1/4 tsp coriander seeds (roughly crushed)
- Pinch of asafoetida
- Pinch of turmeric powder
- 1/4 tsp Red chilli powder
- 1/4 tsp dry fenugreek leaves/Kasuri methi
- 1/4 tsp salt
- 2 tsp oil
- Water for kneading dough
FOR GRAVY
- 1 tbsp oil of your choice (we used mustard oil)
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- Red chilli powder to taste
- 1 tsp coriander powder
- 3 to matoes
- Small piece of ginger
- 2 green chilies
- 1/4 cup curd/yoghurt
- 1 tsp gram flour
- 3/4 cup water
- 1/2 tsp garam masala
- Salt to taste
- 1 tbsp coriander leaves
