Gulab Jamun Cake recipe with homemade Gulab Jamun Premix with step wise pictorial and video method.

Gulab Jamun Cake is a fusion dessert in which the most popular Indian dessert Gulab Jamun is amalgamated with a world famous cake.

WHAT IS GULAB JAMUN?

 

Made with milk solids and flour, gulab jamun is a deep fried dough balls which are soaked in sugar syrup to make a mouth melting dessert.

These are deep brown in colour and can be served hot and cold.

There are various ways to make gulab jamun and the traditional one is made with khoya/Mawa/evaporated milk gulab Jamun.

The other methods include semolina gulab jamun, milk powder gulab jamun, sweet potato gulab jamun and even bread gulab Jamun.

WHAT IS GULAB JAMUN CAKE?

 

Gulab Jamun Cake is a fusion dish wherein the basic components of gulab Jamun, most particularly the milk powder gulab Jamun, are clubbed together and baked in the form of a cake.

Though some people infuse the pieces of real gulab Jamuns in the cake batter but we haven’t done the same.

INGREDIENTS OF GULAB JAMUN CAKE

 

GULAB JAMUN PREMIX : The basic ingredient of this eggless gulabjamun cake is Gulab Jamun Premix.

This is readily available in the market and you feel free to buy it and make a cake.

But we have made the premix too at home.

The basic reason of making premix at home is “All purpose flour”.

Yes, the store bought gulab jamun premix contains all purpose flour/maida which is not considered as a healthy flour.

And why to buy something which is extremely easy to make at home?

Gulab Jamun premix have all purpose flour, milk powder, baking soda and probably some preservatives.

While making the same at home, we have replaced all purpose flour with whole wheat flour and rest of the 2 ingredients remain the same.

Also in the cake, we have added only whole wheat flour and not APF.

SUGAR : Bura sugar is the one treated as healthy form of sugar in comparison to refined sugar. And this is the reason for using the same in this gulabjamun mix cake.

Bura sugar comes in a powdered form. But if you are adding refined sugar, you may not powder it because it will dissolve with oil and milk.

MILK : Prefer to add whole fat milk because it’s protein content, sugar, fat and creaminess is must and very helping for creating a delicious gulab jamun cake recipe with gulab jamun mix.

ROSE WATER : Usually this is vanilla essence which is commonly used in baking cakes.

But as the present one is the gulab Jamun Cake which is supposed to be fragrant with gulab aka rose, hence the role of rose water is first hand.

SALT : A pinch of salt in sweets enhances the taste of the dish.

BAKING SODA/POWDER : This need not to be explained that these both are the chemical leavening agents which help in rising of a cake.

Always prefer to use fresh agents for good results.

CARDAMOMS : How can you skip this fragrant spice when the cake belongs to gulab Jamun family.

SAFFRON : Saffron elevates this cake into special one, giving it an earthy aroma as well as that signature sunshine imbue.

LEMON JUICE: Lemon juice is added only in sugar syrup. This prevents the syrup from crystallizing.

 

 

STEP WISE PICTORIAL RECIPE OF Gulab Jamun Cake recipe with homemade Gulab Jamun Premix

 

MAKING OF GULAB JAMUN PREMIX

1. Mix whole wheat flour, milk powder and baking soda in a bowl. Gulab jamun premix is ready. Keep aside.

MAKING OF GULAB JAMUN CAKE

 

2. Take a bowl and add oil, milk, sugar and rose water in it.

 

3. Give it a good mix so that sugar dissolves completely.

4. Put a sieve over the bowl.

5. Add flour, baking soda, baking powder and salt.

6. Also add gulab Jamun premix initially made.

7. Sieve all ingredients into the bowl.

8. Then mix them using cut and fold method.

9. Transfer the batter in a cake tin lined with greased butter paper.

10. Bake in a preheated oven @180°C in the middle rack for 35 to 40 minutes or until inserted toothpick comes out completely clean.

11. Take the cake out of oven and keep it aside.

MAKING OF SUGAR SYRUP

12. Add water, sugar, green cardamoms, saffron and rose water in a small pan.

13. Boil the water for 2-3 minutes. No need to make a syrup/chashni of any consistency but only slightly thick syrup.

14. Switch off the heat, add lemon juice and mix.

 

FINAL STEP

15. When the cake is slightly warm, take it out of the cake tin.

16. Poke some holes over the surface of cake using toothpick.

17. Pour sugar syrup all over the cake.

18. Dress the cake, if you like. We have liked almonds, cashews, pistachios and dry rose petals. Gulab Jamun cake is ready. Enjoy.

NOTES

1. In case you have store bought gulab jamun premix, then use 1 cup of that premix and no need to make it again as shown in recipe.

2. Store bought gulab jamun premix uses maida/all purpose flour whereas we have used whole wheat flour. You can replace wheat flour with refined flour, if you want to.

3. Also for making a cake, whole wheat flour can be replaced with all purpose flour.

4. We have decorated the cake with almonds, cashews, pistachios and dry rose petals. You can use the nuts of your choice or can keep the cake just plain and simple.

Ingredients
  

1 Cup = 200ml

    FOR GULAB JAMUN PREMIX

    • 1/2 cup milk powder (67 gm)
    • 1/2 cup whole wheat flour (67 gm)
    • 1/4 tsp Baking soda

    FOR GULAB JAMUN CAKE

    • Gulab Jamun premix
    • 1 Cup whole wheat flour (135 gm)
    • 1/2 tsp Baking soda
    • 1/2 tsp Baking powder
    • Pinch of salt
    • 3/4 cup powdered sugar of your choice (194 gm - we have used bura sugar)
    • 1/4 cup oil (50 ml)
    • 1 cup whole milk (200 ml - @room temperature)
    • 1 tsp rose water

    FOR SUGAR SYRUP

    • 6 tbsp water
    • 3 tbsp sugar of your choice (we have used bura sugar)
    • 3 green cardamoms (or 1/2 tsp cardamom powder)
    • Few strands of saffron
    • 1 tsp rose water
    • 1/2 tsp lemon juice

    FOR GARNISH

    • Nuts and dry rose petals
