Eggless pear and apple cobbler | pear cobbler recipe | apple walnut cobbler with vegan options has its basis in United States . It looks like a cake but it is not actually a cake. Not exactly it is a flan or traditional pie in the real sense of the term. “Cobbler” is an English word means “A pie made of fruit with rich biscuit dough usually only on top of the fruit.”
Perfect as a weekend dessert after the dinner, this cobbler recipe has the tendency to grasp the attention of all ranging from kids to old folk. Much easier than any cake or pie recipe, cobbler doesn’t only ask for much expensive or extraordinary ingredients, but at the same time it has almost zero chances to go fail in comparison to baking a cake. Also this is the best way to feed healthy fruits to kids who are otherwise always reluctant in eating anything.
When it comes to naming the fruits which can be used in making a cobbler, let us make it clear that not necessarily you must have both pears and apples in hand to make cobbler. This recipe can be made with only pears or only apples. Cobbler can be made with fruits like peach, blackberry, blueberry, raspberry, cherry, rhubarb, strawberry & so on or with the combo of two or more. You have the liberty to use frozen, canned or fresh fruits.
If you are seeing, making or eating a cobbler for the first time, let us make few things understand to you so that there remains no doubts or queries over your head. Unlike cake, it is mostly eaten warm but no hard & fast rule. Some like it cool or even chilled. It is not to be demoulded from the baking tin/dish and directly served from the dish after cutting a piece of desired size. And lastly don’t get panic on noticing some bubblings on the corners & watery content at the base of cobbler. You have baked a cobbler not a cake.

Step wise pictorial recipe of eggless pear and apple cobbler
- Add pieces of pear and apple in a big bowl and pour clean water sufficient enough to cover them. Squeeze half lemon in it and mix. It will prevent the fruits from changing their colour, most particularly apples. Keep aside.
- Now begin with making of batter. Take another bowl and add butter and powdered sugar in it.
- Mix it so that sugar incorporates in butter and both turns creamy. No need to whip the butter, just mix both.
- Add curd (avoid, if vegan), nutmeg powder and mix fruit essence. Add vanilla essence if fruit essence is unavailable. Mix.
- Place a sieve over the bowl and add all purpose flour, baking powder and salt in it.
- Sieve it to the bowl & mix everything.
- Add milk but slowly and keep mixing. Add the milk only as much as needed to make the batter runny although thick. We needed to add half cup of milk. But if you are vegan, hence not adding yogurt, then you may need to add extra milk than what we added. Your batter is ready. Keep it aside.
- It’s a time to arrange layers of cobbler. Drain water from the fruits (pear & apple) and add walnuts, sugar and cinnamon powder in it. Mix.
- Take a cake tin or baking dish & transfer fruits in it. Evenly spread the fruits over the base of the tin.
- Now pour the batter all over the fruits by slowly moving the bowl of batter.
- Spread the batter so that it covers the entire fruit base.
- Sprinkle sugar and cinnamon powder on the top.
- Tap the cake tin so that air releases, if any, and transfer the cake tin in a pre-heated oven @180°C for 45 to 50 minutes or until golden brown.
- Your eggless pear & apple cobbler is ready. Cut a piece of cobbler with knife from the side of the tin & place in a serving plate. It is usually served warm, either as it is or with vanilla ice cream or whipped cream. However some love it cool.
Enjoy
NOTES
* Soaking the fruits in lemon water is purely optional to prevent their colour change. If you think that you are quick enough to make batter and assemble everything fast, no need to soak fruits. Or on the contrary, cut fruits, especially apples, just before making a layer. Do it the way you like.
* We haven’t removed the skin of apples. Choice is yours.
* You can’t use only pear or only apples to make it. In addition, you can use fruits like blackberry, cherry, strawberry, blueberry, peach, raspberry or others too.
* We have used unsalted butter so added a pinch of salt. But if you are adding salted butter, avoid adding salt separately.
* If you have no issues with egg, replace curd with one egg while preparing the batter.
