Eggless Cashew cake recipe with step wise pictorial and video method.
Rich and delicious cake made using cashews, whole wheat flour and without eggs is such a lovely tea time treat that you would love to try with all your heart.
We make it often because everyone just likes it and that too such an extent that no one waits for the tea time to arrive. Lol.
Soft, fluffy and crumbly, a warm loaf of this cake is sure to make your evening and if there are kids around, it is hard to get your share..lol.
INGREDIENTS USED
FLOUR : To keep the cake healthy, we have used whole wheat flour and not maida. However if you like, you can use maida or both wheat flour and maida in the ratio of 50: 50..
SUGAR : Bura sugar is considered as the pure form of sugar. If you don’t get it, you can use regular refined sugar or even jaggery.
MILK POWDER: Presence of milk powder makes the cake more rich, more delicious.
CASHEWS : As this is a cashews cake, so the presence of cashews is obvious. We have added cashews in two forms. One powdered and another whole for decoration.
YOGHURT, OIL and MILK are the wet ingredients. In place of oil, you can add the butter also.
BAKING SODA & BAKING POWDER are the leavening agents which help in making the cake soft and fluffy.
SALT : A pinch of salt always help in enhancing the flavours of cake.
VANILLA ESSENCE: we all know the importance of essence in cake. Essence take the flavours of cake to another level. If you get the cashew essence, then use it in place of vanilla essence.
STEP WISE PICTORIAL METHOD OF EGGLESS CASHEW CAKE RECIPE
1.Add curd, oil, milk and sugar in a bowl.
2. Mix well.
3. Put a sieve on the bowl and add flour, baking soda, baking powder and salt.
4. Sift into the bowl.
5. Grind cashews in a blender and make a powder.
6. Add cashew powder & milk powder into the bowl.
7. Also add vanilla essence and mix.
8. Pour the batter into a greased cake tin.
9. Decorate the batter with cashews.
10. Bake in a pre-heated oven @180°C for 40-45 minutes in the middle rack of the oven with both the rods.
11. Once done, take the cake out and Invert when cool completely.

Eggless Cashew cake recipe
Ingredients
1 cup = 200 ml
- 2 cup whole wheat flour (294 gram)
- 1 cup sugar of your choice (220 gram - we used bura sugar)
- 1/2 cup milk powder (72 gram)
- 1/2 cup cashews (68 gram)
- 1 cup yoghurt/curd (240 gram)
- 1/2 cup oil (100 ml)
- 1/2 cup milk (100 ml)
- 1 tsp baking soda
- 2 tsp baking powder
- Pinch of salt
- 1 tsp vanilla essence
- 15-20 cashews for decoration
Instructions
- Add curd, oil, milk and sugar in a bowl.
- Mix well.

- Sift into the bowl.
- Grind cashews in a blender and make a powder.
- Add cashew powder & milk powder into the bowl.
