Although in the given recipe, we have used a combination of almond milk and oats milk. both in the ratio of 50-50 in making this vegan condensed milk, but you are not bound to go by the amalgamation of these two ingredients solely.
Additionally you can use cashew milk, coconut milk or soya milk as well.
All you need a plant based milk, that’s it. Be it anything one single or mix of two or three or four in any ratio.
SWEETENER : we have used regular vegan sugar for this recipe. Feel free to use Coconut sugar, Maple Syrup, Date Syrup or Agave Nectar. Choose one based on your flavor preference and dietary needs!
CORNSTARCH: cornstarch is a thickening agent called by the name cornflour in India. It will help the milk to get thick little quickly, and as a result will help the quantity of final product on higher side.
Not at the very beginning, but you may add the cornstarch at any stage when you feel that the milk is bit thick and not getting the requisite consistency.
SALT : It’s not in the case of this vegan condensed milk, but in any sweet or desert, if you add a pinch of salt, it will enhance the flavour and sweetness of the dish.
VANILLA ESSENCE: adding vanilla essence to the condensed milk is purely optional, and we also haven’t added it. Though it may give a very deep flavour and fragrance to the condensed milk, but we didn’t want our condensed milk to be dominated by the flavours of vanilla essence. Choice is yours.
FOR HOW LONG VEGAN CONDENSED MILK CAN BE STORED ?
Vegan condensed milk can be stored for up to a week in refrigerator by putting it into the clean glass airtight bottle.
STEP WISE PICTORIAL RECIPE OF EASY HOMEMADE VEGAN CONDENSED MILK RECIPE
Take oats milk and almond milk in a saucepan and put on low heat. Instead of 2 types of mentioned milks, you can opt for one single milk or any other type of plant milk.
When milk turns lukewarm, take 3-4 tbsp of milk in a bowl and add cornstarch in it.
Give it a good mix free from lumps. Add to the saucepan.
Add sugar and salt. In place of sugar, you can use maple syrup, agave syrup or coconut sugar as well.
Let it simmer on low heat while stirring occasionally.
Milk will thicken and attain a porridge like consistency after 12-15 minutes.
Remove the pan from heat and let it cool completely.
Vegan Condensed milk is ready. If needed, you can use it immediately or otherwise put in a clean airtight container and keep in the refrigerator.
NOTES
Lastly you can add vanilla essence also for nice aroma and flavor but this optional and you can skip it if you prefer neutral taste or plan to use it in recipes where you want other flavours to dominate.
