Made of gram flour batter, Dhokla is a steamed savoury cake from the Indian State of Gujarat and often served as a breakfast or anytime snack.

Though this is a Gujrati snack but with the passage of time, it has gained so much of popularity amongst whole India that it will not be wrong to say that it has become whole India’s snack.
Though not belonging to our region, but this is the most prepared snack in our home ever.

ABOUT THE PRESENT RECIPE
When we came to know that Dhokla can be made in microwave also, it was such a matter of joy for us.
We make it quite often but by steaming which takes exactly 25 minutes whereas this method asked for only 5 minutes. So the thought of saving 20 minutes brought us so much of relief.
Initially we were of the opinion that though microwave can prepare Dhokla and that’s ok but it couldn’t give the exact results what we get from steaming.
So just as a matter of trial, we moved away with this recipe.
But when we were finished with the task of making this dhokla and put the first bite in mouth, OMG, it was indeed a miracle.
By no means, dhokla made in microwave was less than the steamed one.
PRO TIPS TO MAKE PERFECT INSTANT MICROWAVE DHOKLA
1. Only use microwave safe glass bowl.
2. Measure the ingredients using measuring tools. Don’t go by assessment.
3. We have cooked Dhokla on high power i.e. 900 of our LG microwave for 5 minutes. If your high power is different than our’s, then probably your cooking time will also be different.
4. Slice Dhokla only once it is completely cool. If you try to cut it while hot, you will end up with shabby uneven and crumbly edges.
5. Only use hot water while preparing tempering. The reason is that we are using glass bowl and this is hot by the time. If you add cold water in hot glass bowl, it may receive a crack. Sharing this step on the basis of personal experience.
6. Do not delay in cooking once baking soda is added to batter.
STEP WISE PICTORIAL METHOD OF DHOKLA RECIPE IN MICROWAVE
MAKING OF DHOKLA
1.Take a bowl and add Citric Acid, sugar, turmeric powder and salt.
2. Add water and whisk well.
3. Add 2 tbsp of oil and mix again.
4. Now add gram flour and whisk together very well so that there remains no lumps.
5. Put on rest for 15 minutes.
6. Grease a microwave safe glass tray with oil.
7. After 15 minutes are over, add baking soda into batter.
8. Whisk vigorously for a minute. The batter will turn foamy and airy.
9. Immediately transfer the batter into greased tray.
MICROWAVE SETTING FOR DHOKLA
10. Microwave on high power ( our’s is 900) for 5 minutes.
11. Take the tray out of microwave and insert a toothpick in the dhokla. If toothpick comes out clean, its a sign that dhokla is properly cooked.
14. Leave the tray on cooling rack till dhokla is completely cool.
PREPARATION OF TEMPERING
15. Take a small microwave safe glass bowl and add oil and mustard seeds in it.
16. Microwave for 3 minutes on high power.
17. Add curry leaves and green chillies. Microwave for 2 minutes.
18. Lastly add hot water and microwave for 2 minutes.
TEMPERING THE DHOKLA
18. Once dhokla is cool, cut it into desired size of cubes.
19. Drizzle the hot tempering all over it.
20. Garnish with coriander leaves and coconut.
21. Refrigerate until Dhokla is chilled.
Enjoy with tomato ketchup, green chilli hot sauce or any dip of your choice.
NOTES
- As long as Baking Soda is not added, you can keep the batter for hours. But once Soda is added, you need to cook the batter immediately without any delay.
- You may eat/serve Dhokla at room temperature also, but it tastes the best when cold.

FOR MAKING DHOKLA
- 1 cup besan/gram flour 130 gm
- 2 tbsp sugar
- 1/2 tsp citric acid
- 1/8 tsp Turmeric powder
- 1/2 tsp Salt
- 2 tbsp Oil + little extra for greasing
- 1/2 tsp baking soda
- 3/4 cup water
FOR TEMPERING
- 2 tbsp oil
- 1 tsp mustard seeds
- 2 green chillies
- 10-12 curry leaves
- 1 cup hot water
FOR GARNISH
- Handful of coriander leaves
- 1 tbsp Grated coconut optional
Instructions
MAKING OF DHOKLA
