So lets begin with the easy Kashmiri Shufta recipe.
STEP WISE PICTORIAL RECIPE OF AUTHENTIC KASHMIRI SHUFTA RECIPE
1. Take a bowl and add 1/4 cup pistachios, 1/4 cup almonds, 1/4 cup cashews, 1/4 cup walnuts and 1/4 cup raisins.
2. Add warm water to soak them.
3. Likewise soak 10 dry dates in hot water in another small bowl.
4. Keep both soaked for 1 hour.
5. After 1 hour, drain the water from the dry fruits.
6. Also take the dry dates out and chop them into small pieces after removing the pith.
7. Add 2 tbsp desi ghee in a pan.
8. Add 1/4 cup dry coconut.
9. Saute till coconut turns slightly brown.
10. Take it out.
11. Now add 100 gram paneer in the same pan. Paneer is cut into small chunks.
12. Fry paneer till it turns brown from all sides.
13. Take it out as well.
14. As there wasn’t enough ghee left in the pan, so added 1 more tbsp ghee in the pan.
15. Now add the soaked dry fruits and dry dates.
16. Saute them 2 minutes.
17. Lastly add the coconut recently roasted, fried paneer, 1/2 cup sugar, 1/2 tsp black pepper powder, 1/2 tsp dry ginger powder, 1/2 tsp cinnamon powder, 1/2 tsp cardamom powder, 8-10 saffron strands and 1 tbsp dry rose petals.
18. Give it a good mix.
19. Then add 1/4 cup drinking water.
20. Simmer till water is almost evaporated and only 2-3 tbsps of water is left.
Shufta is ready. Serve hot or warm.
