STEP WISE PICTORIAL RECIPE OF INSTANT AMLA PICKLE RECIPE

 

Wash and put amla in a steamer. Steam cook for 15 minutes or until they turn soft. You can check by inserting a knife. But do not overcook. Bring the amla out and then cool a bit so that they can be touched. Split out the seeds.

Heat oil in a pan. Add fennel seeds, dry ginger powder, carom seeds ajwain, Fenugreek seeds, mustard seeds, Nigella seeds, black pepper powder, asafoetida hing, black salt and salt. Then add gooseberries.

Also add green chilies after splitting from the center. Lastly add sugar candy and mix. Put a lid and cook for 8-10 minutes on low heat. Remove from the heat and let it cool down completely.


Amla pickle is ready. Transfer in a clean air tight glass container. This pickle can be stored for 2 months and you can put it in refrigerator as well.

Ingredients
  

  • 1 kg Amla/gooseberry
  • 12-15 green chilies
  • 100 grams mishri sugar candy)
  • 1 tsp fennel seeds (sounf)
  • 1 tsp dry ginger powder (sonth)
  • 1 tsp carom seeds (ajwain)
  • 1 tsp Fenugreek seeds (methi dana)
  • 1/2 tsp mustard seeds (sarsoo k dane)
  • 1/2 tsp Nigella seeds (kalonji)
  • 1 tsp black pepper powder
  • 1/2 tsp asafoetida (hing)
  • 1 tsp black salt
  • Salt to taste
  • 1 tbsp oil
