STEP WISE PICTORIAL RECIPE OF INSTANT AMLA PICKLE RECIPE
Wash and put amla in a steamer. Steam cook for 15 minutes or until they turn soft. You can check by inserting a knife. But do not overcook. Bring the amla out and then cool a bit so that they can be touched. Split out the seeds.

Also add green chilies after splitting from the center. Lastly add sugar candy and mix. Put a lid and cook for 8-10 minutes on low heat. Remove from the heat and let it cool down completely.
Amla pickle is ready. Transfer in a clean air tight glass container. This pickle can be stored for 2 months and you can put it in refrigerator as well.

Ingredients
- 1 kg Amla/gooseberry
- 12-15 green chilies
- 100 grams mishri sugar candy)
- 1 tsp fennel seeds (sounf)
- 1 tsp dry ginger powder (sonth)
- 1 tsp carom seeds (ajwain)
- 1 tsp Fenugreek seeds (methi dana)
- 1/2 tsp mustard seeds (sarsoo k dane)
- 1/2 tsp Nigella seeds (kalonji)
- 1 tsp black pepper powder
- 1/2 tsp asafoetida (hing)
- 1 tsp black salt
- Salt to taste
- 1 tbsp oil
Instructions
- Wash and put amla in a steamer.

- Split out the seeds.
- Heat oil in a pan.
- Add fennel seeds, dry ginger powder, carom seeds ajwain, Fenugreek seeds, mustard seeds, Nigella seeds, black pepper powder, asafoetida hing, black salt and salt.
- Then add gooseberries and green chilies after splitting from the centre.
- Lastly add sugar candy and mix.
- Put a lid and cook for 8-10 minutes on low heat.
- Remove from the heat and let it cool down completely.
