Konkani Taushya Rava Bhakri Recipe | Cucumber Semolina Roti with step wise pictorial and video method.
MEANING OF TAUSHYA RAVA BHAKRI
In Konkani language, the word “Taushya” is the term for Cucumber;
Rava is Semolina. Though Rava has nothing to do with Konkani language originally, but the word is more widely used in Indian culinary culture.
And Bhakri is basically a rustic flatbread often made in Maharashtra and Konkan region.
This is pertinent to mention here that Konkani is a language spoken in the Konkan region of Maharashtra, Goa and parts of Karnataka.
So in nutshell, Taushya Rava Bhakri is a flatbread made using cucumber and semolina, in simple terms.
COURSE
Although one can have it as a snack at any time of the day but basically it is a popular breakfast choice traditionally prepared in Goud Saraswat Brahmin homes and among Marathi-speaking communities.
WHY CUCUMBER IS USED IN MAKING IT?
The coastal climate is generally very high and cucumber being enriched with cooling properties makes it itself ideal for the recipe. Not just cool, but this highly moist ingredient keep the roti soft as well.
VARIATIONS ACROSS STATES
In Karnataka, a similar recipe is made using rice flour and the name of the flatbread is Southekai Rotti.
It’s Maharashtrian name is Kakdichi Thalipeeth or Kakdi Bhakri.
PAIRINGS
As this roti is complete in itself, so you hardly require anything to pair. A dollop or ghee or butter (avoid if vegan) and a cup of hot tea is enough to enjoy it.
However you can enjoy it with homemade chutneys, pickle, or some dry sabzi.

STEP WISE PICTORIAL RECIPE OF KONKANI TAUSHYA RAVA BHAKRI RECIPE
Add all the ingredients in a bowl, the details of which is given in the recipe card at the end of this post.
Give them a good mix.
Cover and rest for 30 minutes.
Take a non stick pan or tawa and put on lowest heat. Apply little oil on it.
Take a handful of mixture and put it in the center of the tawa. At this time tawa should be just warm and not too much hot.
Now with the wet fingers, quickly spread the mixture into a circle by patting on it. Bring the heat low to medium.
After it turns firm in 3-4 minutes, drizzle little oil over the top. Flip it.
Bhakri needs to be cooked from both sides until you see the brown cooked spots on it.
Taushya Rava Bhakri is ready. Enjoy hot.
NOTES
- You can grate the cucumber with the peel on provided peel is tender and not waxed.
- Remove the seeds of cucumber if they are hard. Otherwise no need to remove them.
- Do not squeeze the cucumber and use with its water.
- If after mixing everything, mixture is still dry, you can add bit of water. And if otherwise the mixture seems to be too much wet, you can add bit of semolina.
- Wet your fingers at the time of dropping and spreading the mixture on tawa. This way the mixure will not stick to your fingers.

Ingredients
1 cup = 250 ml
- 1 cup Cucumber
- 3/4 cup Rava/Sooji/Semolina/Cream of wheat
- 1/4 cup Fresh Coconut (grated)
- 2 green chilies (chopped)
- 1 tsp jaggery or sugar (grate or powder if using jaggery)
- 1 tsp ginger (grated)
- Salt to taste
- Handful of coriander
- Oil as required
Instructions
- Add all the ingredients mentioned herein above in a bowl.
- Give them a good mix.
- Cover and rest for 30 minutes.
