Mogra Sharbat Recipe | Refreshing Jasmine (Motia) Drink for Summer with step wise pictorial and video method.
A refreshing summer drink infused with the flavours and fragrance of mogra, one of the most loved flower variety, is enough to make you feel invigorating and zappy.
Mongra is white coloured flower and is known by a variety of names like Jasmine, Chameli, motia, Kundumalligai, Arabian, Jai, Jui, Madanban, Sayali, Kunda or Mallika, and is being harvested between May and November.
With the beginning of summers, you will find the white beauties around and this is the high time to make this refreshing drink.
This beverage has the least popularity and we didn’t know about it at all. But all thanks to dear school time friend Ms. Pavitra Mehta, who brought this amazing recipe to our knowledge.
She too has made it herself and was having all praises for the drink and recommended us to go for it.
And finally, after taking the sip of the drink, the first thought my mind created “thank you Pavitra”. Indeed, it was such a refreshing and soothing that every sip of the drink was like a swing towards hypnosis.
So here you go for the ride full of spellbound experience.
STEP-WISE PICTORIAL RECIPE OF MOGRA SHARBAT RECIPE
Wash mogra very well. You may remove the green part of it, if you want. We are making the sharbat with the greens intact.
MAKING OF CONCENTRATE
Add water and sugar in a pan.
Let it come to roll boil. Discard any impurities if visible floating over the surface of water.
Add green cardamoms and Mongra. Mix well.
Just one boil.
Remove the pan from the heat. Put a lid and leave it soaked from overnight to 24 hours.
After the said period, strain the liquid.
This is mogra concentrate.
MAKING OF DRINK
Take a service glass and add 1/4 part of mogra concentrate. Also add lemon juice.
Fill the rest of the glass with chilled water & ice cubes.
Serve chilled.
NOTES :
- Take the organic flowers which are free from any cent or spray.
- This is purely a personal choice to remove stem (green part) of the flowers. With green part, syrup becomes more strong so left them intact.
- There’s no requirement of making a sugar syrup of any consistency, like one or two string. Just a normal sugar syrup.
- Soak the flowers in sugar syrup for minimum overnight to 24 hours at the maximum for strong flavours.
- During the resting time (overnight or 24 hours), no need of keeping the syrup in refrigerator.
- Mogra concentrate can be stored in refrigerator for 2 to 3 weeks, as it has no preservatives.
- To enhance the life of mogra concentrate upto 5 or 6 weeks, add a pinch of citric acid or 1/4 tsp of lemon juice whike the syrup is boiling. These (any of) ingredients will work as a preservative.
