Pudina Masala Powder is made by drying fresh leaves with simple spices.

1 cup = 250 ml
- 5 bunches Fresh Mint leaves/ about 500 grams
- 1/4 cup Black Salt
- 2 tbsp Black pepper corns
- 2 tbsp Cumin Seeds (dry roasted)
- 1 tbsp salt
Cut the roots of all the bunches of mint.
Remove the wilted and stale leaves.
Rinse the stems so well that there remains no impurities.
Spread the stems on a wide tray or plate.
Place the tray at some shadowed place so that they turn dry. It will take 1 to 2 days.
Thereafter, when the stems turn completely dry, remove their leaves just by scrubbing the stems between palms.
Take a blender jar and add the dry mint leaves in it.
Also add black pepper corns, roasted cumin seeds, black salt and salt.
Blend to a smooth powder.
Sieve the power for smooth powder.
Pudina masala powder is ready. Keep in airtight container.
- You can dry the mint in microwave, oven or air fryer as well. But we opted for the natural process.
- Do not dry mint directly under the sun as it can completely alter the colour, flavour, aroma and essential oils.
- Instead of whole, you can use powdered black pepper and cumins.
- In place of drying the entire stems and thereafter taking out the mint leaves, you can first pluck the fresh leaves from stems one after another and let the leaves turn dry. However we find the method, adopted in the present recipe, more easy and convenient.
