1 cup = 250 ml
FOR THE SHEET
- 1 cup all purpose flour
- 1/4 tsp salt
- 1/2 tsp carom seeds
- 1 tbsp oil
- Water as required
FOR STUFFING
- 4-5 potatoes (boiled & mashed - preferably boiled a day before or atleast 4-5 hours ago)
- 3 tbsp green peas (preferably boiled a day before or atleast 4-5 hours ago)
- 1 tsp cumin seeds
- 1 tbsp green chilli ginger paste
- 1/8 tsp asafoetida/hing
- 2 tbsp onion (thinly chopped)
- 1 tsp fennel seeds (slightly crushed
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 tsp garam masala
- 1 tbsp Kasuri methi
- Salt to taste
- 1 tbsp chaat masala
- 2 tbsp oil
- 2 tbsp coriander leaves
MAKING OF SHEET
Add carom seeds, salt and oil in all purpose flour. Mix.
Add very little water and start kneading.
The dough has to be very hard so be careful while adding water.
Cover the dough and keep aside.
MAKING OF STUFFING
In a pan, heat oil and then add cumin seeds, green chilli ginger paste and asafoetida. Let cumin splutter.
Add onion and slightly cook.
Add boiled and mashed potatoes and green peas (both preferably boiled a day before or atleast 4-5 hours ago).
Also add fennel seeds, turmeric powder, red chilli powder, garam masala, salt, chaat masala and coriander leaves.
Just give a good mix. As everything is precooked, so it requires no long cooking.
Remove the pan from heat and let the stuffing cool down completely.
SHAPING AND MAKING PINWHEEL SAMOSA
Knead the dough just for a minute.
Dust some flour on a clean surface and roll the dough almost to the thickness of a roti.
Spread the potato stuffing on this roti properly but leave a little space at the end of one side.
Start rolling the roti tightly beginning from the end exactly opposite to that blank end.
Apply water at the empty end.
Seal the roll tightly.
Now cut it into pieces/pinwheels. You can use knife or thread.
Put these pinwheels in refrigerator for 15 minutes.
Air fry in a greased basket @180 degree C for 10-10 minutes on both the sides by brushing oil on them. Alternatively, you can bake or deep fry them.
Pinwheel samosas are ready. Enjoy.
- You can make this recipe with readymade puff pastry sheets.
- It is suggested to use the potatoes and green peas which are boiled a day before or atleast 4-5 hours before making this recipe so that they are quite dry and free from water.
- In place of chaat masala, you can use dry mango powder or dry gooseberry powder or even lemon juice.
