Bharwa shimla mirch in air fryer

Bharwa Shimla Mirch is a popular Punjabi dish made by filling the hollow bell peppers with the potato stuffing and then shallow fried.

Ingredients
  

  • 4 Capsicum (medium sized - any colour - green, yellow, red)
  • 2-3 - boiled potatoes (medium sized)
  • 1 tbsp oil + little more for brushing
  • 1/2 tsp cumin seeds
  • 1 green chili (finely chopped)
  • 1 onion (thinly chopped)
  • 1/4 tsp turmeric powder
  • Red chilli powder to taste
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1 tsp dry mango powder or lemon juice
  • Salt to taste
  • 1 tsp kasuri methi

Instructions
 

  • Rinse the capsicum thoroughly and slice off the tops. (Watch video attached to this post for better understanding).
  • Remove the pith and seeds using knife or back of the spoon to make capsicum completely hollow.
  • When the capsicum's top was sliced off, there was still some capsicum attached and we can't waste that. So we have thinly chopped the left out portion of capsicum.
  • Heat oil in a pan, add cumin seeds and let them splutter.
  • Add green chilies, onion and that chopped left out capsicum.
  • Add salt, red chilli powder, turmeric powder, coriander powder, garam masala and saute.
  • Let onion turn pink and translucent.
  • Now add potatoes & mash them well.
  • Add dry mango powder and kasuri methi.
  • Mix well.
  • Keep aside for cooling down a bit.
  • Now fill the capsicum with potato stuffing.
  • Brush oil all over the capsicums.
  • Arrange all the capsicums in a greased air fryer basket.
  • Air fry @170°C/338°F for 15 minutes or until done.
  • Stuffed capsicum is ready. Enjoy.

Notes

  1. If the size of capsicum is too big, then you can cut them into two halves, either horizontally or vertically.
  2. We didn't want to waste any bit of the capsicum, so used the leftover part of it as well in in stuffing. If you have any use of bit of the chopped capsicum, like in fried rice or Manchurian, you can save it for later.
  3. The other way to save each bit of the capsicum is to pull up the stem part after running knife across it. This was the hole will be bit small but no issues with that.
  4. You may use bell peppers of any colour.
  5. Instead of potatoes, you may choose any filling of your choice.
  6. It is upto your wisdom that how much potatoes are required for how many capsicum.
  7. If don't have air fryer, you can bake them as well or you can shallow fry the capsicum. Yes, you need to keep on shifting the sides at intervals until they are completely cooked.
