When the richness of paneer combines with the simplicity of besan, they together create a delectable Gluten-free nutritious dish called paneer besan chilla.

FOR BATTER
- 1 cup besan
- 2 tbsp rice flour (optional)
- 1/2 tsp carom seeds
- 1/2 tsp red chilli powder
- 1 tbsp green chilli sauce
- Salt to taste
- water as required
FOR STUFFING
- 250 gram paneer
- 1/4 cup green beans (finely chopped)
- 1/4 cup onion (finely chopped)
- 2 green chilies (finely chopped)
- 1/2 tsp black pepper powder
- 1/2 tsp garam masala or Thanda Masala
- Salt to taste
FOR ASSEMBLING BESAN CHILLA
- Besan batter
- Paneer stuffing
- Oil as needed
- Tomato ketchup as needed
PREPARATION OF BATTER
Take a bowl and add 1 cup besan, 2 tbsp rice flour, 1/2 tsp carom seeds, 1/2 tsp red chilli powder, 1 tbsp green chilli sauce and salt to taste.
Mix well.
Add water gradually and keep mixing.
Prepare a thick but flowing consistency batter.
PREPARATION OF CHILLA
Take a non stick pan and spread a tsp of oil in it.
Drop in a ladle full of batter and spread in round shape like a dosa or chilla.
Immediately spread paneer stuffing over the batter.
Press the stuffing gently.
Drop a tbsp of tomato ketchup over the stuffing.
Let chilla cook on low heat underneath till it turns firm and slightly brown.
Flip the chilla and let it cook from stuffing side as well for a minute or two. Press for thorough cooking.
Paneer besan chilla is ready. Serve hot with tomato ketchup or any dip of your choice.
- Rice flour adds a little crispiness to the chilla. You may skip it if don't have.
- Chilies can be adjusted according to taste. Skip if making the chilla for kids tiffin.
- In addition to green beans, you may add other veggies also which can be eaten partly cooked.
