WHAT ARE MEXICAN POTATO SKINS?
Mexican potato skins are a unique twist on the classic appetizer. Baked potato halves filled with the ingredients of one choice and then again baked to crisp makes a popular choice for parties or game day snacks.
THE BEST WAY TO USE POTATO SKINS
When it comes to appetizers or snacks, the first ingredient that strike to mind is potatoes.
Be it in the form of French fries, Cajun potatoes, potato chips or Indian popular snacks samosa, bread rolls, aloo tikki, potatoes are everywhere.
But here this is for the first time, there’s a recipe wherein the potatoes (here referring to their flesh) aren’t in use but their skins are being used, which are otherwise discarded.
Although we know that potato skins are edible and have been used potatoes with skin intact in many recipes previously like Cajun potatoes, french fries and hash browns.
FILLING OF POTATO SKINS
Yippee, no rules here.
Meaning thereby, go for anything who want to have in your delicious appetizer.
If we begin to mention the various stuff s who can fill in your potato skins, internet may collapse due to the length of the post. Lol.
TYPE OF POTATOES USED ?
Although you can use any potatoes, provided they are large in size. However if preference to be given, go for russet/Idaho potatoes are the best because their skin is the heartiest and can hold up to the loaded filling.
POTATO SKINS WITHOUT AIR FRYER
This recipe can easily be made without air fryer. For first stage cooking, potatoes can be baked in oven or even boiled. But thereafter for further 2 steps, you can bake them in oven instead of air fryer.
STEP WISE PICTORIAL RECIPE OF VEGAN POTATO SKINS IN AIR FRYER
FOR FIRST AIR FRYING
Take equal sized potatoes for uniform baking. Wash the potatoes very well. They should really be washed well because these potatoes will be eaten with skin. The quantity of potatoes and other ingredients is given in the recipe card at the end of the post.
Apply oil all over the potatoes and sprinkle some salt across the potatoes.
Put in the air fryer basket. Air fry @200°C for 45 minutes. Turn their side in the mid way. However the air frying time may vary depending on the size of the potatoes.
NOTE : Instead of air frying, you can baked the potatoes in oven or simply boil them.
Check by inserting a toothpick and if it seems to be done, take the potatoes out. Leave them to cool completely.
NOTE : You can do upto this step a day before and leave the potatoes in refrigerator for next day process.
FOR SECOND AIR FRYING
Cut the potatoes in vertical giving them a shape of hot dog.
Scoop out the flesh of the potatoes, leaving about 1/4″ border. Be careful not to rip the skin of the potatoes.
Brush oil inside the potatoes and sprinkle black pepper powder as well.
Put in the air fryer basket and air fry @200°C for 10 minutes or until crisp. Take them out and keep aside.
PREPARATION OF STUFFING
Take a bowl and add red kidney beans (boiled or canned beans), sweet corns, onion (finely chopped), mozzarella, butter, lemon juice, coriander leaves, oregano, red chilli flakes, garlic powder and salt.
Give them a good mix.
FINAL PREPARATION OF MEXICAN POTATO SKINS
Take each potato skin/boat and fill in the stuffing.
Top with more mozzarella.
Put in the air fryer basket and air fry @200°C for 2-3 minutes.
Take out and put on a bit of sour cream or Greek yoghurt.
Serve after garnishing with spring onion greens, a sprinkle of red chilli flakes and oregano.

NOTE
There’s no limit as to what can be used for stuffing. Prepare and fill whatever you feels like eating.

FOR FIRST AIR FRYING
- 3 Large Russet Potatoes
- 1 tbsp olive oil
- Bit of salt
FOR SECOND AIR FRYING
- Air fryed potatoes
- 1 tbsp olive oil
- Black pepper powder as per taste
FOR STUFFING
- 1/2 cup red kidney beans (boiled or canned beans)
- 2 tbsp sweet corns
- 1 small onion (finely chopped)
- 1/3 cup mozzarella (vegan)
- 1 tbsp butter (vegan)
- Juice of 1 lemon
- 2 tbsp coriander leaves
- 1/2 tsp oregano
- 1/2 tsp red chilli flakes
- 1/4 tsp garlic powder
- Salt to taste
FOR THIRD AIR FRYING
- Stuffed potato skins
- 2-3 tbsp mozzarella
- Red chilli flakes for sprinkling
- All purpose seasoning for sprinkling
FOR SERVING
- Spring onion greens
- 2 tbsp Greek yoghurt or sore cream (vegan)
- Red chilli flakes for sprinkling
- Oregano for sprinkling
