Sirke wala pyaaz recipe | Pickled onion recipe with step wise pictorial and video method.
Sirka means Vinegar and Pyaaz is onion. So it’s a baby onion recipe which is made by preserving onions in vinegar with few more spices.
Though this recipe is called picked onion in English but this is not a pickle literally. But yes, an onion which is preserved in vinegar and hence absorbs the tanginess of vinegar, gives a tangy taste, much like pickle.
Sirke wala pyaz is most common vegan and glutenfree condiment in North Indian restaurants and served complimentary with the lunch and dinner.
Before the meal arrives on the table, this condiment is served at the first place and mostly people begin to eat it before the actual meal reaches them. Lol.
INGREDIENTS USED IN MAKING SIRKE WALA PYAZ
Very handy ingredients are needed to make this recipe which are as under:
ONIONS: Prefer to use small red onions particularly shallots and avoid white or green onions as they may not yield the same result.
And in case you are not able to get baby onions, then you can go for the big sized onions too, after cutting them into pieces.
SPICES : We have used spices like cumin seeds, bay leaf and black pepper corns. You can also use ginger, cinnamon and star anise while the water is boiling.
SUGAR: You can directly add sugar to the recipe but caramelizing it enhances the life of the pickled onions.
SALT : Some add salt and some doesn’t. However we have added a very little amount of salt.
VINEGAR: Use regular white vinegar to pickle the onions.
BEETROOT: Adding beetroot is optional but highly recommended because it gives vibrant red colour to the sirke wale pyaaz.
Instead of fresh beetroot, you can also add beet powder to the recipe.
STEP WISE PICTORIAL RECIPE OF SIRKE WALA PYAAZ
1. Peel the baby onions, remove their root side and mark a cut × on the opposite side of root, which is called shoot. The cut should not complete separate the onion in 4 parts.
2. Put the onions in a bowl of water and keep aside.
3. Take a non stick pan and add 1 tbsp sugar in it.
4. Let sugar caramelize on low heat.
5. When sugar caramelized, add 1 cup of water and mix well.
6. Add 1 bay leaf, 1 tsp cumin seeds, 10-12 black pepper corns and 1/2 tsp salt.
7. Let water boil for 5 minutes.
8. Switch off the heat and let water cool down completely.
9. Take a clean sterilized glass jar and add onions in it.
10. Also add 5-6 green chilies after removing their crown.
11. Peel and cut the beetroot in small pieces and add to the glass jar.
12. Now the water must have turned completely cool. Add this water to the jar by passing through a sieve.
13. Add 1/2 cup of white vinegar.
14. As the onions are not completely sunk in liquid, so add more water upto the level so that onions get completely sunk.
15. Put a lid and place the jar in refrigerator and rest for 24 hours.
Sirke wala pyaz is ready.

Once the onion is finished, you can add more onions for the next batch.

- 5-6 green chilies
- 1/2 beetroot
- 1 tbsp sugar
- 1 bay leaf
- 1 tsp cumin seeds
- 10-12 black pepper corns
- 1/2 tsp salt
- 1/2 cup sirka/white vinegar
- 1 cup drinking water (plus some extra as per need)
- A bowl of water
Instructions
