Sarrata recipe | Sanatta recipe with step wise pictorial and video method.
Sarrata is a popular drink from the State of Uttar Pradesh, India made from buttermilk, minimal spices and red chilli powder in particular.
Though the making process is very similar to making raita, but what makes this drink stands apart is it’s tadka.
The tadka is made in a small earthen pot, called mitti ka diya in Hindi, which brings an earthy flavour to the drink.
This drink is usually relished after the lunch in hot summers for quick digestion.
We have come across this recipe on Instagram, wherein it was posted in the name of Sannata.
There was so much of uproar for calling it Sannata. Most of the comments were saying that it is called Sarrata and not Sannata.
Other than it’s name, there was so much of conflict over many other things, like :
1. Very few says this drink doesn’t belong to UP but majority said that it is mainly from Aligarh, Bulandshahr and Etah and usually a part of weddings and served during pattal ki dawat (food served on broad leaves) in villages.
2. Some were of the opinion that Sannata is the correct name because it silences all the tummy problems. It is called by this name in western and Bundelkhand region of UP but most of the comments were against this opinion.
As per them, the correct name is Sarrata not because it is electrifying in taste but also because it is very super spicy.
There was one user who said that it is neither Sarrata nor Sannata but called as Separata, which is also known as chaach or mattha (buttermilk). Separata word came from Separate.
3. There were comments which negated the making process of this drink. As per them, it is made with old buttermilk (chaach) which has turned very sour and is very thin with almost zero fat.
Someone wrote that it is made by combining new curd with old curd and buttermilk. It is sour to such an extent that you have to have it with food, otherwise you may not be able to consume it.
One user wrote that it is made by mixing a buttermilk and water. Ground mustards are added to them and then it is kept under sun for some time. Pumpkin is also added to it. This user presented this recipe as from bundelkhand.
There was one more comment saying that to make this drink, the curd was traditionally sourced from various houses in the village and the older the curd is, the better the drink would be.
4. Some users wrote that they have never heard about this drink inspite of being from UP.
5. There was a comment writing that only desi ghee/clarified butter is used for tadka and not mustard oil.
6. Further, more more was, Bundi is not to be added in it.
Though we loved the recipe to greater extent but after finding so much of conflicting comments, we were of utmost confusion that what to belive in and what not.
We googled this recipe, searched all over social media platforms and YouTube and found some but all were little different from one another to some extent.
However, we decided to make it and tried to bring the recipe close to all the opinions received allover.

STEP WISE PICTORIAL RECIPE OF Sarrata recipe | Sanatta recipe
1.Take 1 cup curd in a bowl and whisk well.
2. Add 1 cup water and whisk together well to make it like a buttermilk consistency.
3. Add salt to taste, 1 tsp red chilli powder, 1 tbsp coriander leaves, 1 tsp mint leaves (dry or fresh) and 3/4 cup boondi.
4. Mix well.
5. For tadka, place an earthen lamp/mitti ka diya on gas stove.
6. Let the diya heat up to such an extent that it begins to turn extremely hot.
7. Add 1 tbsp mustard oil and heat the oil.
8. Lastly add 1 tsp cumin seeds and 1/8 tsp hing.
9. Let cumin splitter and turn deep brown.
10. Pick the hot diya with utensil holder and put inside the curd.
11. Immediately put a lid and let it remain for 5 minutes.
12. Remove the diya.
Mix well and sarrata recipe is ready. Serve chilled.
NOTES
- If you already have sour buttermilk, no need of curd and water.
- You can enhance the quantity of red chilli powder as per your bearability.

- 1 cup water
- Salt to taste
- 1 tsp red chilli powder
- 1 tbsp coriander leaves
- 1 tsp mint leaves (dry or fresh)
- 3/4 cup boondi
FOR TADKA
- 1 tbsp mustard oil
- 1 tsp cumin seeds
- 1/8 tsp hing/asafoetida
Instructions
- Take 1 cup curd in a bowl and whisk well.
- Add 1 cup water and whisk together well to make it like a buttermilk consistency.
- Add salt to taste, 1 tsp red chilli powder, 1 tbsp coriander leaves, 1 tsp mint leaves (dry or fresh) and 3/4 cup boondi.
- Mix well.
- For tadka, place an earthen lamp/mitti ka diya on gas stove.
