Eggless Whole wheat Carrot cake recipe | eggless carrot cake | carrot cake without condensed milk is a delicious, flavoured, soft, moist and most delectable cake recipe ever.
Originated from Gothenburg, Sweden and first witnessed in the restaurants and cafeterias of US in early 1960s, carrot cake is also named as Passion Cake.
We always love to prepare those recipes which are amalgamation of two different natured ingredients/foods. Especially those, in which one part is healthy but kids dislike that and second part is loved by kids and it has first part hidden inside.
This is a general phenomena that most of the kids hate vegetables and they love cakes. As the vegetables being healthy are must for kids, secretly feeding them such vegetables is a challenging yet interesting task. And this cake is one of the perfect example of any such recipe.
Here is the closing of winter season so is the closing of carrots too. And before they totally disappear, we wanted to try this lovely cake which we finally made.
After it is being served to our family members and few of the guests, the most common compliment, especially from family members received was, this is one of the most tastiest cake they have ever eaten. And yes, this cake was like that only.
Usually carrot cake is made using condensed milk but that hits little more on your pocket. Moreover, condensed milk is not readily available in every home. So you need to arrange the ingredients well in time if making it with condensed milk.
On the contrary, the ingredients used to make the present recipe are easy, simple, economical and every time present in the kitchen. And it’s being a season of carrots, you can easily locate few carrots in your refrigerator. Lol. All you needed 1 big or 2 small carrots.

MAKING OF CAKE
- Take a big bowl & add curd, oil & powdered sugar in it.
- Mix all very well.
- Place a big sieve over the bowl and add whole wheat flour, baking powder, baking soda, cinnamon powder & salt in it.
- Sieve these ingredients into the bowl.
- Add grated carrots.
- In a separate small bowl, mix dry fruits of your choice with half teaspoon of flour.
- Add into bowl with red food colour (optional) and mix everything. Don’t overdo.
- Transfer this batter into a greased cake tin.
- Bake @180℃ for 40-45 minutes or until cake turns golden brown.
- Insert a toothpick. If it comes out clean, means cake is baked perfectly.
- Let it turn cool. Invert. Your carrot cake is ready.
MAKING OF ICING (Optional step)
- In a small bowl, add powdered sugar and carrot puree.
- Add very little milk and mix to make a thick syrup.
- The consistency of syrup should be similar to what we make as chashni. Its thick yet flowing.
- Pour this thick syrup over the cake all over.
- Cut the cake into slices of desired size and enjoy.
NOTES
- Powdered sugar can be replaced with powdered jaggery.
- Red food colour is mentioned as optional. It is added to give a deep shining effect to cake. You can safely skip it.
- The word ‘packed’ is mentioned against the ingredient ‘carrots’ which means that when you measure the grated carrots by cup, pack the cup fully loaded by pressing and not just fluffed up grated carrots in a cup up to the level, be counted as one cup.

Ingredients
1 cup = 200 ml
For making cake
- 2 Cup Whole wheat flour
- 1 Cup carrots grated/packed
- 3/4 Cup Powdered sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking soda
- Salt a pinch
- 1/2 tsp Cinnamon powder
- 1 cup curd
- 1/2 cup Oil
- Few drops of red food colour optional
- 2 tbsp Dry fruits of your choice
- 1/2 tsp whole wheat flour
For icing (optional step)
- 1/2 cup powdered sugar
- 1 tbsp carrot puree
- Milk as per need.
