Vegan No Bake Peanut Butter Oats Dates Bars

Vegan No Bake Peanut Butter Oats Dates Bars are wholesome, no-bake treats with peanut butter richness, oats satiety, dates sweetness, and chocolate indulgence.

Ingredients
  

1 cup = 250 ml

FOR THE BASE

  • 1 cup Medjool dates
  • 1 cup peanut butter
  • 1/2 cup rolled oats
  • 1/4 cup peanuts (chopped)
  • Pinch of salt

FOR CHOCOLATE LAYER

  • 1/2 cup dark Chocolate
  • 1/2 tsp coconut oil

Instructions
 

MAKING OF BASE

  • Remove the seeds from dates and cut them into pieces.
  • Add boiling hot water in dates, cover the bowl and soak for 15 minutes or until dates turn soft. Keep aside.
  • Dry roast oats for 3-4 minutes on low heat.
  • When they cool completely, grind them to a fine powder.
  • Take this oats powder in a bowl.
  • By now, dates must have been softened. Take them off the water and when dates are cool, turn them into a paste.
  • Take this dates paste in the same bowl having oats powder.
  • Also add peanut butter, salt and chopped peanuts.
  • Give them a good mix.
  • Now transfer this mixture in a square tin lined with greased butter paper or parchment paper. Make sure there's extra paper coming out of the edges of the tin.
  • Level this mixture by pressing firmly so that it gets spread on all the sides. Keep in refrigerator till needed.

PREPARE THE CHOCOLATE LAYER

  • Take chocolate in a microwave safe bowl. However you can melt chocolate using double boiler method as well.
  • Also add coconut oil.
  • Microwave at the intervals of 30 seconds and keep checking every time.
  • Once melted, pour the chocolate over the prepared base.
  • Spread evenly by tilting the tin.
  • Refrigerate for 1–2 hours or until completely firm.
  • Lift the slab out using parchment paper and cut into bars or squares.
  • Enjoy. Store in an airtight container in the refrigerator. Keeps well for 7–10 days.

Notes

  1. You can sprinkle a bit of crushed peanut, coconut flakes or flaky sea salt on top, for extra appeal, but make sure before the chocolate sets.
  2. For chunkier bars, use whole oats instead of powdered oats.
  3. Keep refrigerated during summer to maintain shape.
  4. These peanut butter oats bars are such a flexible and creative recipe in many ways. You can add cocoa powder in the base for more deeper chocolate flavor.  Also you can mix in seeds or nuts of your choice. Even you can replace or add almond butter with peanut butter. Choices are endless.
