Take a bowl and add butter and powdered sugar. Butter should be at room temperature.
Whisk them so well. You can use electric beater or hand whisk as well.
Butter will turn creamy.
Add all purpose flour, baking powder, vanilla essence and salt. Skip salt if butter is salted.
Mix them again.
Better to use your hand and bring everything into a dough.
Now separate dough in the ratio of 3 : 1. Meaning thereby, divide the dough in 3/4 and 1/4 part.
Add cocoa powder in 1/4 part of dough.
Mix well so that it turns out to be a homogeneous dough.
First take a tiny portion of chocolate dough and make a small smooth ball out of it.
Place this chocolate ball on a baking tray lined with greased butter paper or silicon mat.
Likewise make a tiny ball with the white/vanilla dough.
Arrange white dough balls (5-6) surrounding the chocolate ball. Better watch a video ofvthis recipe in the recipe card below for better understanding.
Then complete one more circle surrounding the first white dough balls circle but this time in alternative colour. Meaning thereby, one chocolate ball, then vanilla ball and likewise complete the circle.
Gently press the balls with hand or something having smooth base.
Now place a round cutter or some glass to cut out the edges. Make sure the cookies should include all three rounds of balls. Though the outer portion of third round of balls will be partly cut out from the outside.
Remove the extra outer dough.
Likewise make all cookies over the baking tray.
Place the tray in refrigerator for 15 minutes.
Transfer this tray in preheated oven and bake @170°C for 25 - 30 minutes.
Bring the tray out and let the cookies cool down completely.
