1 cup = 250 ml
- 1 tsp Instant coffee powder
- 1/4 cup - 50 g vegan butter (at room temperature)
- 1/2 cup - 68 g all purpose flour
- 2 tbsp powdered sugar
- 1.5 tsp cornflour/cornstarch
- 1 tbsp cocoa powder
- 1/8 tsp baking powder
- Pinch of salt
- 2 tsp hot water
PREPARATION OF DOUGH
Mix coffee powder with warm water and keep aside. This is our coffee concoction. Let it cool down completely.
Take butter and powdered sugar in a bowl.
Whisk them so well until butter turns creamy.
Add coffee concoction and mix.
Put a sieve over the bowl and add flour, baking powder, salt and cocoa powder.
Sift to the bowl.
Mix using your finger tips but do not use your palm.
A kind of dough is ready.
SHAPING THE COOKIES
Divide this dough in 10 equal portions.
Roll each portion between your palms and give it an oval shape.
Mark a slight cut in the middle using knife or spoon back, so that it looks like a coffee bean.
Arrange all on a baking tray lined with parchment paper or greased butter paper or silicon mat.
Place the tray in refrigerator for 30 minutes.
BAKING THE COOKIES
Preheat the oven @160°C for 10 minutes and then slide the tray in the oven. Bake @160°C for 25-30 minutes or until cookies turn slightly brown.
Take them out and let cool completely.
Store them in the air tight container and enjoy.
