Sugar free eggless dates cake

Sugar free eggless dates cake made with whole wheat flour and sweetened with natural sweetener dates is undoubtedly deserves to be appreciated as healthy bake.

Ingredients
  

1 cup = 200 ml

  • 25-26 Medjool Dates
  • 1.25 cup Milk (extremely hot)
  • 1 cup whole wheat flour (+1 tsp extra)
  • 1/2 cup oil
  • 1/2 tsp Baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla essence
  • Pinch of salt
  • 1/4 cup walnuts

Instructions
 

  • Remove the seeds from the dates and roughly chop them.
  • Add milk in dates.
  • Cover the bowl and keep aside for 3 to 4 hours.
  • After the said time, transfer the dates milk into a blender.
  • Blend them to a smooth puree.
  • Transfer the puree to a bowl.
  • Add oil and vanilla essence.
  • Whisk them very well.
  • Place a sieve over the bowl.
  • Add 1 cup of flour, baking powder, baking soda and salt.
  • Sift them to the bowl.
  • Coat walnuts with a tsp of flour.
  • Add walnuts to the bowl.
  • Mix well using cut and fold method.
  • Transfer the batter into a greased pan.
  • Bake in preheated oven @170°C for 35 to 40 minutes in the middle rack of the oven with both the rods on.
  • Take the cake out and insert a toothpick in it. If toothpick comes out clean, cake is perfectly baked.
  • Let cake cool down completely before demoulding.

Notes

  1. This cake is mildly sweet. If you like more sweetness, you may add 3-4 tablespoon of sugar also.
  2. Oil and wheat flour can be replaced with melted butter and all purpose flour respectively.
  3. You may omit walnuts or replace it with some other nuts.
