Refreshing Plum Mocktail blends tangy plum puree, zesty lemon, and soda for a sweet-tart, thirst-quenching summer drink everyone loves.

FOR MAKING DECOCTION
- 500 gram plum/aloo bukhara (roughly 13-14 pieces)
- 500 gram mishri/sugar candy (or sugar/jaggery)
- 1 litre water
- Juice of 1 lemon
FOR SERVING
- 3-4 tbsp of plum decoction (adjust according to taste)
- Soda or 7up or Sprite as required
- Black salt to taste
- Ice cubes
MAKING OF DECOCTION
Wash and add plum to 1 litre of boiling water.
Boil 20 minutes.
Mash them well.
Sieve.
Mash the extract staying in the sieve because still there's so much of plum.
Transfer the collected plum water back to the pan.
Add sugar candy.
Let it dissolve. Also let the liquid boil for 5-10 minutes until it thickens slightly.
During boiling, you are likely to find the foam floating over the surface of the liquid. Discard it.
As we have used sugar candy with a thread (popularly called dhage wali mishri) we needed to sieve it again. If you would have used sugar or jaggery, there was no need for the second time filter.
Add lemon juice and mix.
Let it cool down completely. It is the plum decoction. Fill it in bottle and put in refrigerator.
SERVING A DRINK
Take a serving glass, add ice cubes and 3-4 tbsp or as much you want, plum decoction.
Add black salt and mix.
Finally pour in the soda, 7up or Sprite to make it plum Mocktail. But if instead of these drinks, you will add simple chilled water, it will be your aloo Bukhara Sharbat.
Decorate with mint leaf and enjoy.
- You can double or triple the quantity as per your requirement.
- The plum decoction can be used for 2 to 3 weeks in clean glass bottle in refrigerator.
- Don't miss to add black salt because it will double the taste of the drink.
- Don't throw the lemon peel after squeezing as it can be made a part of interesting lemon peel pickle.
- In place of lemon, you can add 1 tbsp of vinegar.
- The quantity of plum decoction at the time of serving may vary depending on the fact whether you are serving it with soda, cold drink or simple water. As soda and water are plain, you may need more decoration whereas cold drinks may call for less decoction bring already sweet.
