Orange Kheer | Komola Kheer

Orange kheer is a unique combination of oranges and milk and perfect recipe of fast/ vrat.

Ingredients
  

  • 1 Litre Milk (Full Fat)
  • 3 Medium Oranges
  • 2 tbsp Arrowroot flour
  • 1/2 tsp Cardamom Powder
  • 4 tsp Orange zest
  • 6 tbsp Sugar
  • 2 pinches saffron
  • 2 tbsp Dry fruit as per choice
  • 1/4 cup + 2 tbsp water

Instructions
 

  • Take a heavy bottomed pan and add 2 tbsp of water and full fat milk. Put the heat on high.
  • When the milk begins to boil, lower the heat. Mix arrowroot powder in 1/4th cup of water and mix well to no lumps.
  • Pour this slurry to the milk while steering continuously
  • Allow the milk to simmer while scrapping the sides occasionally because malai will keep on sticking to it
  • In about 40 - 45 minutes when the milk will reduce to half. Ie 500 mL add saffron and sugar
  • Let the milk simmer for more 8-10 minutes or until milk turns creamy in texture
  • Remove the pan from the heat. Add cardamom powder and chopped nuts. Mix well.
  • In the mean time, peel, deseed and chop the oranges finely. Keep aside.
  • Once the milk has cooled down, add the chopped oranges and orange zest in the milk.
  • Give it a good mix
  • Place the orange kheer in the refrigerator. Garnish with rest of the crushed dryfruits and serve chilled.

Notes

Make sure that the oranges you are going to use are sweet. Sour oranges will spoil the taste of kheer.
 The purpose of arrowroot powder is just to shorten the time of coming milk to half. If you don't have arrowroot powder, no issues. Let milk reduce to half on its own. 
In case you are not observing fast, you can also use cornflour in place of arrowroot powder.
 Zest is prepared by scraping or cutting from the outer, orange coloured skin of orange. It is used to add flavor to foods.
To make orange zest, grate the outer skin of the orange peel. Be careful as you should only grate the upper orange coloured layer of the orange peel and not the white inner portion of orange peel.
Incase you have orange essence, feel free to use that as well for more intense flavor Don't add orange into milk unless milk is completely cool otherwise milk will curdle.
This kheer tastes best only if served chilled.
