Momos recipe without maida | momos chutney recipe

Ingredients
  

FOR STUFFING

  • 2 cup cabbage (roughly chopped)
  • 1 cup carrots (roughly chopped)
  • 1 medium onion (roughly chopped)
  • 2 green chilies
  • 4 garlic cloves
  • Salt to taste
  • 1/2 tsp black pepper powder
  • 1 tbsp oil

FOR DOUGH

  • 1.5 cup Semolina
  • 1/2 tsp salt
  • Water to knead dough
  • Corn flour as required for rolling

FOR MOMOS CHUTNEY

  • 2 tomatoes
  • 5-6 dry red chilies
  • 7-8 garlic cloves
  • 1/3 tsp sugar
  • Salt to taste
  • 2 tbsp tomato ketchup
  • Juice of 1/2 lemon
  • 1 tbsp oil
  • 1 cup water

Instructions
 

PREPARATION OF STUFFING

  • Take a chopper and add cabbage. If you don't have chopper, you can do it with knife.
  • Chop cabbage.
  • keep aside.
  • Then add carrots, chop and keep aside.
  • Lastly add onion, green chilies and garlic.
  • Chop them too and keep aside.
  • Add oil in a pan.
  • Add chopped veggies, black pepper powder, salt and stir fry just for 2 minutes on high heat. Keep aside.

PREPARATION OF DOUGH

  • Take semolina and add in a grinder jar.
  • Grind to a powder, as fine as you can do.
  • Take it out in a bowl.
  • Add salt.
  • By slowly adding water, knead a dough.
  • Initially dough will be little sticky. Rest 10 minutes.
  • Thereafter knead it for a minute.
  • Divide tiny portions of the dough.
  • Roll a portion using cornflour. Roll it as thin as possible.
  • Put some stuffing in the middle.
  • Pick any side of the flatbread and then, start pleating the edges together, pressing them firmly to seal.
  • When it is half done, pick up the other side and stick it to the pleated side and ensure it's sealed well.
  • Put the momos in a greased steamer.
  • As we have a small steamer, we have used electric rice cooker as well for the purpose of steaming.
  • Steam cook 15 minutes.
  • Momos are ready.

MAKING OF MOMOS CHUTNEY

  • Take a pan and water, tomatoes, dry red chilies, garlic cloves, sugar and salt.
  • Boil for 10 minutes or until tomatoes turn soft.
  • Add lemon juice and mix.
  • Remove from the heat to cool completely.
  • Once cool, grind to a coarse paste.
  • Take oil in a pan.
  • Transfer paste into it.
  • Add tomato ketchup.
  • Cook for 5-7 minutes until slightly thick.
  • Momos chutney is ready.
  • Add lemon juice and mix.
  • Enjoy
