Meri Recipe Jammu Special – A traditional, flavorful dish from Jammu, made with authentic spices, rich taste, and cultural heritage.

1 cup = 250 ml
- 1 cup raw rice
- 2 cup curd (sour)
- 2 tbsp mustard oil
- 1 bay leaf
- 1 tsp cumin seeds
- 1/2 tsp Fenugreek seeds
- 1/2 tsp coriander seeds
- 1 black cardamom
- Pinch of hing
- 3 dry red chilies
- 10-12 curry leaves (fresh or dry)
- 1 tsp red chilli powder
- 1/4 tsp turmeric powder
- Salt to taste
- 2.5 cup water
Heat mustard oil in a pan until it smokes.
Add cumin seeds, Fenugreek seeds, coriander seeds, hing, black cardamom, bay leaf and dry red chilies.
Roast until cumin splutter.
Add curry leaves and roast for couple of seconds.
Add rice (washed, soaked for 20 minutes & drained).
Saute rice for 2-3 minutes.
Add red chilli powder and turmeric powder. Mix.
Add water and mix.
Put a lid and cook for 8-10 minutes or until rice are 90% cooked.
You can check by pressing a grain of rice.
Whisk the curd.
Add to the rice.
Start stirring continuously until curd begins to boil otherwise curd may curdle.
Lastly add salt and cook just for a minute.
Serve hot.
- You need not to use basmati rice compulsorily. Any local brand will work.
