Meethi Mathri Recipe for Karwa Chauth Vrat

Ingredients
  

1 cup = 250 ml

FOR MATHRI

  • 1 cup all purpose flour/maida
  • Pinch of salt
  • 3 tbsp desi ghee
  • Chilled water as required
  • Oil for frying

FOR SUGAR SYRUP

  • 1/2 cup sugar
  • 2 green cardamoms or 1/2 tsp cardamom powder
  • 1/4 cup water
  • Pinch of saffron (optional)

FOR GARNISH

  • Almonds & Pistachios (chopped)
  • Melon seeds
  • Dry rose petals

Instructions
 

  • For MAKING MATHRI, take flour, salt and desi ghee.
  • First of all mix them together.
  • Take some portion in hand and press to give it a shape. If it holds a shape, it means ghee (moin) is perfect, otherwise add more ghee.
  • Now start adding little water and knead a tight dough.
  • Cover and rest the dough for 15 minutes.
  • After 15 minutes, knead the dough again for a minute.
  • Divide the dough in 8 equal portions.
  • Take each portion one by one and start rolling it. To prevent the dough from sticking, you can apply bit of oil or ghee on surface (chakla) and rolling pin (belan).
  • The size of each mathri is slightly bigger than poori and each mathri should be rolled bit thicker than puri.
  • Using a fork or knife, poke some dents on both the sides of rolled dough. It will prevent the mathri from puffing up while frying.
  • For frying, oil has to be less than medium hot. Put a rolled dough in it. Initially it will sink at the bottom. It's a sign that oil is accurately hot.
  • Slowly the mathri will come up and begins to float.
  • Turn the side of mathri and add the second one and likewise add few more. The quantity depends upon the fact how big your kadai is. We have added 4 mathri at a time one after another.
  • Allow the mathris to fry on low heat by turning their sides quite often. It may take 12-15 minutes for frying one batch but don't do hurry.
  • Once all mathris turn gently brown from both sides, take them out and likewise fry the second batch as well.

  • To make Meethi Mathri, let's prepare the SUGAR SYRUP. Take sugar, green cardamoms and water in a pan.
  • When water begins to boil, add saffron, if you want to.
  • Boil the syrup until it reaches 1 string consistency.
  • Immediately take the sugar syrup off the heat.
  • Using a tong, dip the mathris in hot sugar syrup so that they get coated from both the sides. Do it little fast because sugar syrup will crystalize soon.
  • Garnish the mathris with almonds, Pistachios, melon seeds and dry rose petals but again be fast a little because once sugar coated on mathris will dry, the garnish will not stick to them.
  • Let the sugar syrup coated on mathris turn completely dry. It may take 15 to 20 minutes.
  • Meethi Mathris are ready. They can be stored for a month in an air tight container.
