Take dates (seeds removed), jaggery and water in a bowl. If using sugar in place of jaggery, then don't add sugar for boiling.
Boil for 5 minutes.
Remove from the heat and let it cool down completely.
Grind to a fine puree.
MAKING OF CHUTNEY
Put a sieve on a pan and add puree and soaked tamarind (with water).
Squeeze out the pulp in the pan.
Add dry ginger powder, red chilli powder, salt, black salt and roasted cumin powder. If you haven't used the jaggery, then add sugar at this stage.
Simmer on moderate heat till the mixture slightly thickens.
You can check the thickness by coating a spoon or spatula. Then draw a line and if a clear line is formed, its thick enough. Remember, chutney will thicken more on cooling and much more in refrigerator.
Take the pan off the heat and let it cool down completely.
Dates chutney is ready. Enjoy.
Notes
This recipe can be made with dry dates as well but they need to be boiled for a longer.
