Jeera rice recipe restaurant style (cumin rice)

Jeera rice aka cumin rice is an India staple food made using steamed rice, jeera i.e. cumin and few little spices.

1 cup = 200ml
FOR WASHING & SOAKING RICE
- 1 Cup Rice preferably long grain basmati
- Running water for washing
- Water for soaking
FOR COOKING RICE
- Rice soaked & drained
- 4 cups water
- 1 bay leaf
- 2 cloves
- 3 green cardamoms
- 1 black cardamom
- 1 star Anise
- 1/2 inches cinnamon stick
- 1 piece of mace
- 1 tsp salt
FOR TEMPERING
- 2 tbsp Oil
- 1 tbsp cumin seeds
- 1 tbsp coriander leaves
WASHING & SOAKING OF RICE
Take rice in a bowl and wash them, preferably under running water. Wash the rice 3-4 times or until water runs clear.
Soak the rice for 30 minutes in enough water.
COOKING OF RICE
Take a pan and add water, bay leaf, cloves, green cardamoms, black cardamom, star anise, cinnamon stick, mace and salt.
When water begins to boil, add rice after draining the soaked water.
Let rice cook uncovered on full flame.
In 10 to 12 minutes, rice will be tender and soft enough worth eating. You can check by pressing a rice grain between your thumb and index finger. Do not overcook them.
Immediately pass the rice through a sieve so that water drains.
Spread rice in a wide plate and keep aside.
TEMPERING OF RICE
Add oil and cumin seeds in a pan.
Let cumin splutter and turn brown.
Add rice in the pan.
Give it a good stir without breaking the rice.
Sprinkle some chopped coriander leaves/cilantro.
Jeera rice are ready.
- If not vegan, prefer desi ghee/clarified butter over oil for more delicious and flavourful jeera rice.
- Don't over roast the cumin otherwise they will bring bitter taste to the rice.
