How to make Ajwaini aloo without boiling potatoes

Ajwaini Aloo without boiling potatoes is a quick, flavorful dish where potatoes are sautéed with carom seeds and spices.

Ingredients
  

  • 500 gram potatoes (roughly 6-7 depending upon their size)
  • 1 tsp ajwain/carom seeds
  • 1 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp mustard oil
  • 1 tbsp coriander leaves

Instructions
 

  • Peel the potatoes.
  • Cut them into dices. Make sure they all are of equal sizes so that they get cooked equally.
  • Add them in water till needed.
  • Take mustard oil in a pan.
  • Let the oil cook to the smoking point.
  • Add potatoes.
  • Then add ajwain/carom seeds, red chilli powder, turmeric powder, coriander powder and salt.
  • Give them a good mix.
  • Cover the pan with a lid and let potatoes cook on low heat.
  • Keep stirring at intervals to prevent them from sticking to the bottom of the pan.
  • Cook until potatoes turn soft enough to eat. Check by cutting/pressing or tasting a piece of potato.
  • Add garam masala and coriander leaves.
  • Give a good mix and enjoy.
