Peel the potatoes.
Cut them into dices. Make sure they all are of equal sizes so that they get cooked equally.
Add them in water till needed.
Take mustard oil in a pan.
Let the oil cook to the smoking point.
Add potatoes.
Then add ajwain/carom seeds, red chilli powder, turmeric powder, coriander powder and salt.
Give them a good mix.
Cover the pan with a lid and let potatoes cook on low heat.
Keep stirring at intervals to prevent them from sticking to the bottom of the pan.
Cook until potatoes turn soft enough to eat. Check by cutting/pressing or tasting a piece of potato.
Add garam masala and coriander leaves.
Give a good mix and enjoy.
