Healthy Vegan Brownies made with Sweet Potatoes

Ingredients
  

1 cup = 250 ml

  • 1 cup/250 gram Sweet potato puree
  • 3/4 cup/95 gram wheat flour
  • 1/4 cup/25 gram Cocoa powder
  • 1/2 cup/100 gram brown sugar
  • 1/4 cup/40 gram peanut butter or almond butter
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tsp vanilla essence
  • 1/4 cup/30 gram walnuts (chopped)
  • 1 or 2 tbsp plant milk

Instructions
 

  • Add sweet potato puree, sugar, peanut butter and vanilla in a bowl.
  • Mix them so well that they become uniform.
  • Put a sieve over the bowl.
  • Add flour, cocoa powder, baking powder, salt and walnuts.
  • Sift.
  • Add walnuts to the bowl.
  • Mix well.
  • If the batter is too much dry, add 1 or 2 tbsp of milk. We just needed to add 1 tbsp.
  • Transfer in 8×8 cake tin lined with greased butter paper.
  • Bake in preheated oven @180°C for 30-35 minutes or until toothpick comes out clean.
  • Let it cool down and then take out of the mould and cut into pieces.
  • Enjoy your sweet potato brownie.
