Take fresh mint leaves and add to the blender jar.
Also add sugar.
Grind to a fine powder.
In a bowl add butter and whisk until creamy.
Then add powdered sugar mint mixture.
Whisk again until thoroughly mixed and turn creamy.
Then add flour but little at a time.
Keep mixing.
With the last batch of flour, add baking baking powder, baking soda, salt and green food colour.
Give a good whisk.
Lastly add chocolate chips.
Mix well.
Now take a lemon sized dough and roll between your palms.
Place on baking tray lined with greased butter paper. As we are having silicon mats, we are going for that.
Press each ball using a fork to give them good design.
Top the cookies with more chocolate chips.
Place in refrigerator for 30 minutes.
Bake in preheated oven @160°C for 20-25 minutes or until the edges of the cookies aren't turn slightly brown.
Take out and let cookies turn completely cool.
