- 700 - 800 ml water for boiling
Wash and soak dry dates overnight.
Next day, cut the cap and remove the seeds.
Grind them to a fine paste. Use water as much needed to make a paste. We used approximately 1-1.5 cup of water. If the grinder is small. Do it in batches.
Transfer the paste in a pan.
Add water.
Boil on moderate heat for 30 minutes so that juice of dates is almost extracted.
Sieve the dates. Do not throw the leftover, it can be used many ways.
Transfer the juice extracted in a sauce pan.
Boil on moderate heat until begins to thicken slightly. Don't thicken it too much as it will turn more thick on refrigeration.
It will also begin to change its colour to dark brown.
Remove from the heat and let cool completely.
Dates syrup is ready. Store it in a clean glass jar in refrigerator.
