Authentic Hyderabadi Eggless Karachi Biscuits

Authentic Hyderabadi Eggless Karachi biscuits are fragrant, buttery cookies with candied fruit, rich in traditional flavors, perfect for tea-time indulgence.

Ingredients
  

1 CUP = 250 grams

  • 1 cup All purpose flour / Maida
  • 1 cup Whole wheat Flour /atta
  • 1/2 cup Powdered sugar
  • 1/4 cup Custard Powder (vanilla flavoured)
  • 75 grams Butter  (at room temp)
  • 1/2 cup Tutti fruity
  • 1/4 tsp Baking powder
  • 1/8 tsp Baking soda
  • pinch of Salt
  • 1/2 tsp Pineapple essence
  • 1/2 tsp Orange Essence
  • 2-3 tbsp Milk (or as per need)

Instructions
 

  • Take a bowl & add butter and powdered sugar . Whisk well using electric beater or hand blender , until its creamy and fluffy.
  • Now add all purpose flour, custard powder, baking powder, baking soda, salt.
  • Combine well and mix using the hand blender until everything comes together
  • Add pineapple essence and orange essence
  • Give them a good mix.
  • Firstly mix well using your hands.
  • Then add milk, very little at a time and start bringing the mixture together.
  • Bring out the entire mixture into a dough together but without kneading.
  • Divide the dough into 2 parts and roll each one of them to a cylindrical log.
  • Shape and rap it in cling film.
  • Place the covered logs in freezer for 1 hour or in  refrigerator for 2-3 hours or till they become hard.
  • After the said period remove the log  and cut into 1/2 inch thick roundels with the help of a sharp knife.
  • Grease the baking tray with butter, arrange the cookies on it without touching each other.
  • Place the tray in the middle rack of the preheated oven at 180° C for 20 mins or till the edges of the cookies become light golden.
  • Once done, let the cookies come to room temperature & then store in an airtight jar. It will remain good for about a week.

Notes

  1. The purpose of milk is only to bind the dough together. So use carefully. Dough shouldn't become too loose due to extra use of milk. Use as per need primarily.
  2. Since the temperature varies from oven to oven, it may takes less or more time in baking. So do keep an eye while you are baking the cookies. Do not over bake them as then they will become very hard.
  3. Initially the cookies will look soft when hot but after cooling down, they will become crunchy.
