1 cup = 250 ml
FOR BOILING QUINOA
- 1 cup Quinoa
- 2 cups water for boiling
FOR COOKING QUINOA
- 1 tbsp oil
- 1 tbsp garlic chopped
- 3 green chilies chopped
- 1/4 cup onion chopped
- 1/4 cup bell pepper chopped
- 1/4 cup carrot chopped
- 1 tsp red chilli flakes
- Salt to taste
- 1 tbsp lemon juice
FOR MAKING RICE PAPER WRAPS
- 10-12 Rice Papers
- Carrot Juliennes
- Cucumber Juliennes
- Cilantro
- Few drops for oil
FOR DIP
- 1/2 cup vegan yogurt (we have used (oats Yogurt)
- 1/2 tsp black pepper powder
- 1/2 tsp roasted cumin powder
- Salt to taste
BOILING QUINOA
Take quinoa in some sieve and rinse it so well.
Transfer quinoa in a bowl and add water.
Soak it for atleast 4 hours or overnight.
Sieve it and transfer quinoa to a pan.
Add water.
Keep the heat high initially and when water begins to boil, bring the heat to medium.
Let quinoa boil until all water is evaporated.
Remove the quinoa off the heat.
COOKING QUINOA
Heat oil in a pan and add garlic, onion and green chilies.
Cook until onion turns slightly pink.
Add bell pepper, carrot, salt and red chilli flakes.
Cook on high heat for 2-3 minutes, but don't let the crunch of veggies go.
Add boiled quinoa and lemon juice.
Mix well and cook for a minute or two. Make sure there remains no water.
Keep quinoa off the heat.
MAKING RICE PAPER WRAPS
Wet rice paper in water for 12-15 seconds.
Place it on some clean surface.
Put some carrot & cucumber Juliennes alongwith cilantro.
Add some quinoa over the Juliennes.
Fold the rice paper from all the sides making it like a wrap.
Arrange them in greased air fryer basket. If you don't have Air Fryer, you can roast them in a pan with little oil.
Apply little oil on them.
Air fry @180°C for 10 minutes on one side and 5 minutes on other side.
MAKING OF DIP.
Take vegan yogurt (oats Yogurt in this post) and add salt, black pepper powder and roasted cumin powder.
Mix well.
Enjoy rice paper quinoa wraps with oats Yogurt dip.
