Ingredients

1 cup = 250 ml

  • 2.5 cup all purpose flour/maida
  • 1/2 cup semolina/suji
  • 1/2 cup leftover achari masala
  • 1 tsp carom seeds
  • Salt to taste
  • Water as required to knead dough

Instructions

  • Take a bowl and add all purpose flour, semolina, carom seeds and salt.
  • Add leftover achari masala.
  • Mix everything so well.
  • If the masala doesn't have sufficient oil, you should add more oil. To check, hold the flour in hand and if it binds, it's a sign that oil is sufficient.
  • Start adding water and keep kneading.
  • Knead into a normal dough.
  • Cover and rest for 30 minutes.
  • After 30 minutes, knead the dough just for a minute.
  • Take a portion out of it and cover the rest.
  • Roll it into a thin roti.
  • Poke the surface with the fork.
  • Cut into desired shape.
  • Air fry @180°C for 10 minutes. Alternatively you can bake or deep fry them.
  • Achari Mathri is ready. Let it cool down completely before storing in air tight container.

Notes

  1. Quantity of ingredients may vary depending on the fact that how much achari masala is left with you.
  2. The actual taste of the mathri will totally depend upon the taste of your leftover achari masala. We were having the masala left from instant gajar muli ka achaar.
