Jammu wale naan | how to make chole wale naan | jammu street food naan

Jammu wale naan served with chole and chutney is the favourite street food of jammu.

Ingredients
  

For dough

  • 2 cup whole wheat flour/atta
  • 2 cup all purpose flour/maida
  • 1/4 cup oil
  • Salt a pinch

For stuffing

  • 4 boiled potatoes
  • Handful of coriander leaves
  • Salt a pinch

For assembling naan

  • Stuffing already prepared
  • Dough already prepared
  • 1/4 cup Carom seeds/Ajwain or as per need
  • 1/4 cup Oil or as per need
  • 1/2 cup water or per need
  • Dry all purpose flour for dusting

Instructions
 

Making of dough

  • Sieve all purpose flour and whole wheat flour.
  • Add salt and oil in it.
  • Without adding water, mix it so that oil incorporates in flour. If you try to hold the flour & it is getting a shape, moine is fine.
  • Knead a soft dough with water and apply oil all over it.
  • Cover the dough with wet kitchen towel and rest for 30 minutes.Till the time dough is on rest, prepare the stuffing.

Making of stuffing

  • Boil potatoes & take them on a plate after removing their skin.
  • Mash with the potato masher.
  • Add a handful of coriander leaves and salt in it. Mix & set aside.

Making of naan

  • Take a ball size dough and make a well in the center of it.
  • Put one tbsp of potato stuffing inside.
  • Now holding dough from all the sides, cover the filling so that it gets wrapped inside the dough ball.
  • Dust some flour on rolling board and place this ball on the board.
  • Apply some oil over the head of the ball & sprinkle some carom seeds on it.
  • With the help of your finger tips, press the ball in such a way that it keeps on getting flattened & spreading from all the sides. If you are finding it complex, use the rolling pin (belan) to do this task. The width should neither be too thick nor too thin.
  • Apply some water on the lower side of rolled naan. Lower side of the naan is one which is plain & upper side is one, on which oil was applied & carom seeds were sprinkled.
  • Place this naan on the hot iron tawa with lower side down towards tawa.
  • In a couple of seconds, you will observe small bubbles on the upper side of naan.
  • Immediately turn the side of tawa facing naan direct with flame.
  • Keep moving by holding the handle of tawa, cook naan from all the sides.
  • Once done, return back & remove naan from tawa.
  • Apply
    on the hot naan. Serve hot. Use vegan butter,in case of vegan or avoid applying anything on naan.

Notes

  1. Instead of 50:50 whole wheat flour and all purpose flour, you can make it with 100% all purpose flour. Though you can make it with full whole wheat flour too, but that lacks the perfect texture and stretchability.
  2. These naans are made exclusively to be served with chole, so they have no spices at all. Potatoes filing have only pinch of salt and coriander leaves.
  3. Do not use non stick tawa to make naans.
