Meethe Chawal | sweet rice recipe

Meethe Chawal is an amazing sweet delight which is usually made on the day of Basant Panchami.

Ingredients
  

  • 1 Cup rice (200 gram)
  • 2 tbsp desi ghee
  • 3/4 cup sugar (185 gram)
  • 2 tbsp dry coconut (cut into slivers)
  • 2 tbsp almonds (chopped)
  • 2 tbsp cashews (chopped)
  • 2 tbsp raisins
  • Few strands of saffron
  • Few drops of yellow food colour
  • 1/4 tsp black pepper corns
  • 1 tsp fennel seeds
  • 2 green cardamoms (crushed)
  • 2 cup water

Instructions
 

  • Wash rice 2-3 times and soak them for 30 minutes.
  • Add ghee in a pressure cooker.
  • When ghee melts, add coconut, almonds, cashews, raisins, black pepper and fennel seeds.
  • Saute till dry fruits gather some brownish colour.
  • Add sugar and water.
  • Also add saffron, cardamoms and yellow food colour. Mix.
  • Lastly add rice after draining water from them.
  • Put a lid and pressure cook for 3 whistles.
  • Let the pressure release on it's own and meethe chawal are ready.

Notes

  1. You can increase or decrease the quantity of sugar as per your requirement. Also you can adjust the intensity of colour as per your liking. For us, this much of sugar was a perfect balace.
  2. If you don't have both Saffron and yellow food colour, just put ½ tsp spoon of ghee in a pan on low flame and add pinch of turmeric (haldi) in it. Be careful, haldi shouldn't burn. Add it to the rice.
