shaam savera is a cheese stuffed spinach koftas cooked in tomato gravy.

Ingredients
  

For koftas

  • 1.5 cup Spinach
  • 1/2 cup Paneer/Cottage Cheese
  • 1/2 tsp Ginger chopped
  • 1/8 tsp Turmeric powder
  • a pinch of Cardamom powder
  • 3 tbsp Gram flour
  • 2 tbsp Oil plus for frying
  • Salt a pinch (plus 1/8 tsp

For Gravy

  • 1.5 cup Tomato Puree / tomato paste
  • 1 cup Onion paste
  • 2 tbsp Oil
  • 2-3 Cloves
  • 1 inch Cinnamon stick
  • Mace a pinch
  • 1/4 tsp Garam Masala
  • 1 tsp Ginger garlic paste
  • 2 tsp Red chilly powder
  • Milk or water as per need
  • Salt to taste
  • 2 tbsp Butter
  • Cream/Malai as per need

Instructions
 

For Koftas

  • Wash the spinach, trim its leaves and blanch them in boiling water for two to three minutes.
  • Drain the water and add cold water into the boiled spinach to stop the cooking process. Let them cool down.
  • Squeeze out the excess water, and chop the spinach finely. Keep aside.
  • In another bowl mash the paneer (cottage cheese) with a little salt and a pinch of green cardamom powder.
  • Make small balls of paneer & keep aside.
  • Heat oil in a non stick pan .Add ginger garlic paste & saute for a minute.
  • Add gram flour / besan and continue to saute for one to two minutes. Add turmeric and stir.
  • Add the spinach and salt and continue to saute, stirring continuously, until the mixture is dry. Set aside to cool.
  • Take a small amount of spinach portion, flatten it on your palm and place a paneer ball in the center.
  • Gather the edges and close them in the shape of a ball.
  • Heat oil in a pan and fry theĀ  balls until turn light golden brown.
  • Once fried, remove them in a plate and keep aside.

For Gravy

  • Heat the oil in a pan. Add cloves, cinnamon stick, mace & cloves and saute for 30 seconds.
  • Add ginger garlic paste saute it for a minute untill turn golden brown.
  • Add onion paste and let it cook for 2 to 3 minutes.
  • Add tomato puree / paste and mix well.
  • To this add salt, red chili powder & garam masala powder.
  • Stir and cook the gravy for approx five more minutes.
  • Add milk or water to make the gravy smooth & let it boil.
  • Add butter and fresh cream or malai.
  • Pour the gravy into a serving bowl, halve the koftas and place on the gravy and serve hot.
