(Boiled and then fried)

Instructions
Take oil in a pan and add 1 tsp ginger, 1 tsp garlic and 2 green chillies.
Saute till ginger garlic turns brown.
And 1 onion and mix.
Char 1 dry red chilli on gas stove.
Add this charred chili to the pan.
Cook onion till it turns pink and translucent.
Add 1/4 cup carrots, 1/4 cup mushrooms, 1/4 cup cabbage, 1/4 cup green beans and 1/4 cup spring onion greens.
Saute on high heat for 2-3 minutes. Make sure veggies shouldn't loose their crunch.
Add 2 tbsp soy sauce, 1 tsp black pepper powder, 1 tsp sugar and salt to taste.
Cook for a minute.
Add 3 cups of water.
Also add 1 stem of coriander.
Mix 2 tbsp of corn flour with 2 tbsp of water.
Add this corn flour mixture to pan.
Add 1 tsp vinegar.
Boil for 2 minutes.
Remove the coriander stem and charred dry red chilli.
Add coriander leaves.
Veg Mancho Soup is ready. Serve hot after garnish with fried noodles.
Notes
Be careful while adding salt because in this recipe we are also using soya sauce, which already carries salt in it.
