Ingredients
  

  • 1 Kg carrots
  • 3 tbsp Desi Ghee / clarified butter
  • 1 cup Jaggery (or sugar)
  • 250 grams Khoya / Mawa
  • 3 Green Cardamoms
  • Dry fruits of your choice

Instructions
 

  • Peel all the carrots one after another and cut their stem part.
  • Cut the carrots into small pieces of any size and wash them.
  • Put all the carrots into blender and blend coarsely.
  • Take a heavy bottomed Kadai and add 2 tbsp of desi ghee in it.
  • Add all the blended carrots in it and mix well.
  • Cover the kadai with a lid and give at least 15 to 20 minutes to the carrots to cook on low flame.
  • keep on sauteing the carrots at some intervals after removing the lid to prevent them from burning.
  • Add jaggery and keep on cooking.
  • The jaggery is when completely absorbed, add Khoya and mix it well into the carrots.
  • Add cardamoms and chopped dry fruits of your choice. Mix well.
  • At last add one more tbsp of desi ghee to the carrots to bring shine to your halwa.
  • Your gajar ka halwa with Khoya is ready.
  • Serve gajar ka halwa hot after garnishing with more dry fruits and khoya
