Whole wheat banana walnut cake is one of best and easy eggless cake recipe to utilize bananas getting ripened.

Ingredients
  

1 cup = 200 ml

  • 1.5 cup whole wheat flour / atta (plus 1 tbsp extra for dusting)
  • 5 bananas (ripe to over ripe)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • a pinch salt
  • 1/8 tbsp cinnamon powder (optional)
  • 1/2 cup sugar
  • 1 tsp vanilla essence
  • 2/3 cup oil
  • 1 cup Walnuts

Instructions
 

  • take a bowl and add bananas in it.
  • mash them well with the help of a fork.
  • add sugar and oil and mix well so that everything assembles together very well.
  • sieve 1.5 cup of whole wheat flour, baking soda, baking powder, salt and cinnamon.
  • with the help of a spatula, mix the mixture lightly.
  • add vanilla essence and 1/4 cup of walnuts (after dusting with 1 tbsp of flour) to the batter and mix it. but don't over mixing.
  • grease the baking tin with oil and transfer the batter into the tin and level the upper surface with spatula.
  • spread the rest of the walnuts (3/4 cup) over the top of batter.
  • tap the cake tin to release air bubbles.
  • bake in the preheated oven @180°C for 55 to 60 minutes.
  • take the cake tin out from the oven & place it on cooling rack. once cool, invert the cake in a plate.
  • your whole wheat banana walnut cake is ready. cut into slices & enjoy.

Notes

  1. You can skip whole wheat flour & make this cake with all purpose flour too. Or can use both in the equal ratio.
  2. Cinnamon powder is optional but it's presence brings a zesty touch to the cake. to make the cake more barmy, you can add 1/8 of nutmeg powder too along with cinnamon powder.
