Veg manchurian Dry in air fryer

Veg Manchurian dry is an Indo-Chinese vegan appetizer made of wisps of vegetables assembled together into dumblings and then deep fried and finally coated in Chinese sauces.

FOR MANCHURIAN BALLS
- 1/4 cup carrot (grated)
- 1/4 cup capsicum (finely chopped)
- 1/2 cup cabbage (finely chopped)
- 1/4 cup spring onion greens (chopped)
- 1/4 cup french beans (finely chopped)
- 2 tbsp onion (finely chopped)
- 3 tbsp corn flour (called corn meal outside India)
- 3 tbsp all purpose flour/Maida
- 1/2 tsp black pepper powder
- 1/2 tsp Salt
- 1 tsp red chilli sauce spicy, not sweet
- Oil for brushing balls
FOR SAUCE
- 1/2 tbsp sesame oil
- 4 tbsp spring onion bulbs/scallions
- 1/2 tbsp ginger chopped
- 1 green chilli
- 1/2 tbsp soya sauce
- 1 tbsp tomato ketchup
- 1 tsp red chilli sauce spicy, not sweet
- 1/2 tsp vinegar plain or apple cider
- 1/4 tsp corn flour called corn starch outside india
- 1/4 tsp black pepper powder
- 2 pinches Salt
- 1 tbsp Spring onion greens for garnish
MAKING OF MANCHURIAN BALLS
Take a bowl and add carrots, capsicum, spring onion greens, cabbage, french beans and onion.
Also add red chilli sauce, black pepper powder, corn flour, all purpose flour and salt.
Mix them very well and make small balls with the greased hands. No need to add water as the moisture from vegetables is enough to bind the balls. If the mixture is too wet, add more maida.
Put all the balls in a greased Airfryer basket.
Brush them with oil.
Airfry @180°C for 10 minutes or until balls turn brown and crispy.
MAKING OF SAUCE
Add oil in a wok/pan and add ginger, garlic, green chilli and scallions.
Saute till ginger, garlic turns brown.
Add soy sauce, tomato ketchup and red chilli sauce. Cook for 30 seconds.
Add black pepper powder, salt and corn flour. Don't put much salt because soya sauce, tomato ketchup and Manchurian balls are already having salt in them.
Saute for 30 seconds.
Put the Manchurian balls into the sauce and cook for a minute until balls are coated well.
Lastly garnish with some spring onion greens.
Use any oil you use in regular cooking if don't have sesame oil.
Use the vegetables of your choice or as per their availability.
In place of red chilli paste, green chilli paste can also be used.
