Shalgam ki sabzi is a vegan and gluten-free dry curry made in a basic style using minimal and regular ingredients from the kitchen.

- 500 gram turnip/shalgam
- 1 onion (chopped)
- 2 Tomatoes (chopped)
- 1 green chilli (chopped)
- 1 tsp cumin seeds
- 1/8 tsp asafoetida/hing
- 1 tbsp ginger garlic paste
- Red chilli powder to taste
- 1/4 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp water
- 2 tbsp oil
- 1 tbsp coriander leaves/cilantro chopped
Peel, wash and cut the turnip into pieces.
Take oil in a pan and add cumin and asafoetida. Let cumin splutter.
Add green chilli and ginger garlic paste. Let the paste turn brown.
Now add onion and cook the onion until it turns slightly brown.
Add tomatoes and cook till tomatoes begin to release oil and leave the sides of the pan.
Add red chilli powder, turmeric powder, salt and coriander powder. Mix.
Then add turnip and water. Mix.
Put a lid and let turnip cook on low heat .
Stir the turnip at intervals.
Cook until the turnip turns soft enough to eat. This may take 20-25 minutes.
Once it is done, add garam masala and mix. Garnish with coriander leaves and enjoy.
