Shalgam ki sabzi is a vegan and gluten-free dry curry made in a basic style using minimal and regular ingredients from the kitchen.

Ingredients
  

  • 500 gram turnip/shalgam
  • 1 onion (chopped)
  • 2 Tomatoes (chopped)
  • 1 green chilli (chopped)
  • 1 tsp cumin seeds
  • 1/8 tsp asafoetida/hing
  • 1 tbsp ginger garlic paste
  • Red chilli powder to taste
  • 1/4 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp water
  • 2 tbsp oil
  • 1 tbsp coriander leaves/cilantro chopped

Instructions
 

  • Peel, wash and cut the turnip into pieces.
  • Take oil in a pan and add cumin and asafoetida. Let cumin splutter.
  • Add green chilli and ginger garlic paste.
  • Let the paste turn brown.
  • Now add onion and cook the onion until it turns slightly brown.
  • Add tomatoes and cook till tomatoes begin to release oil and leave the sides of the pan.
  • Add red chilli powder, turmeric powder, salt and coriander powder. Mix.
  • Then add turnip and water. Mix.
  • Put a lid and let turnip cook on low heat .
  • Stir the turnip at intervals.
  • Cook until the turnip turns soft enough to eat. This may take 20-25 minutes.
  • Once it is done, add garam masala and mix.
  • Garnish with coriander leaves and enjoy.
