Add oil in a pan and add cumin seeds and let them splutter.
Add green chilies and onion.
Let onion turn pink and translucent.
Add salt, red chilli powder, turmeric powder, coriander powder and dry mango powder. Saute.
Now add potatoes & mash them with a masher.
Mix well after adding coriander leaves.
Keep aside for cooling down completely.
In the meantime, rinse the capsicum thoroughly and slice off the tops. (Watch video attached to this post for better understanding).
Remove the pith and seeds using knife or back of the spoon to make capsicum completely hollow.
Now fill the capsicum with potato stuffing.
Arrange all the capsicum in air fryer basket and brush or spray oil over them.
Air fry @180°C/356°F for 15-20 minutes or until done.
Stuffed capsicum is ready. Enjoy.
