Air fried Spring rolls are a popular snack wherein noodles cooked with veggies are filled in a cylindrical rolls and air fried to crisp.

Equipment

Ingredients
  

1 cup = 200 ml

    FOR THE DOUGH

    • 1.5 Cup All Purpose Flour
    • Salt a pinch
    • 1 tbsp Oil
    • Water for kneading dough

    FOR PREPARING FILLING

    • 2 Cup Noodles (boiled)
    • 1 tbsp Oil
    • 1 tbsp Ginger Garlic Paste
    • 1/2 Cup Spring Onion bulb/onion
    • 1/2 Cup Carrots (finely chopped)
    • 1/2 Cup Capsicum (finely chopped)
    • 1/2 Cup Cabbage (shredded)
    • 1/2 Cup Spring Onion greens
    • 1 tbsp Soya sauce
    • 1 tbsp Chilly Sauce
    • 1 tbsp Vinegar
    • 1 tsp black pepper powder
    • Salt to taste

    FOR MAKING SLURRY

    • 1 tbsp All purpose flour
    • 3-4 tbsp water

    FOR SHAPING ROLLS

    • Dough
    • Filling
    • Slurry
    • Flour for dusting

    FOR AIR FRYING ROLLS

    • Raw Rolls
    • Oil as needed

    Instructions
     

    MAKING OF DOUGH

    • Add flour, salt and oil in a bowl.
    • Give them a good mix.
    • Start adding water slowly to knead a dough.
    • Knead a tight dough.
    • Cover the dough and put it for rest until filling is ready.

    PREPARATION OF FILLING

    • Add oil and ginger garlic paste in a pan and saute.
    • Add onion, carrots, cabbage, capsicum and spring onion greens. Saute.
    • Then add soya sauce, chilli sauce, vinegar, salt and black pepper powder.
    • Saute the veggies on high heat for 2-3 minutes but make sure veggies should not loose their crunch.
    • Lastly add boiled Noodles and give a good mix.
    • Keep the pan off the heat and let the filling cool down completely.

    MAKING OF SLURRY

    • Mix flour and water in a small bowl to make a slurry of thick but flowing consistency.

    SHAPING OF ROLLS

    • Take a small portion of dough and roll it between your palms.
    • Place a ball over a flour dusted surface.
    • Roll the ball into a round disc as thin as possible.
    • Take a tablespoon or as much needed of filling and place it on one side of the disc.
    • Fold the disc from the corners as shown in the step wise pictorial recipe above.
    • Start rolling tightly beginning with the side carrying the filling.
    • Apply some slurry on the end so that the disc gets sealed properly.
    • Now the disc has come into the shape of a proper cylinderical roll having the sides sealed.

    AIR FRYING THE ROLLS

    • Grease the air fryer basket with oil.
    • Place the rolls inside but don't over crowd the basket and add as much as can be accommodated easily.
    • Apply oil all over the rolls.
    • Pre heat the air fryer @ 200°C/392°F for 5 minutes.
    • Put the basket inside and air fry @200° C/392°F for 10 minutes.
    • After 10 minutes are over, turn the sides of all the rolls.
    • Apply oil over the top of Rolls.
    • Air fry again at the similar temperature for 5 minutes.
    • Spring Rolls are ready.
    • Enjoy after cutting them into pieces with tomato ketchup.

    Notes

    Our spring rolls were ready in 15 minutes. However how long to cook spring rolls in air fryer varies from air fryer to air fryer.
