Firstly take the soaked fruits and nuts mixture out of refrigerator and let it come to room temperature.
Switch on the oven for preheating @160°C or @320°F for 10 minutes.
Add oil and powdered sugar in a bowl. Whisk well.
Add flax egg and whisk well.
Now add soaked dry fruits (including juice).
Put a sieve on the bowl and add whole wheat flour, baking soda, baking powder, cinnamon powder, cardamom powder, nutmeg powder and ginger powder.
Sift them into a bowl.
Also add lemon juice and mix using cut and fold method.
Add water to adjust the consistency of batter. However the batter must be thick.
Transfer to a baking tin greased with lined butter paper or parchment paper. Do note that fill the batter only upto 3/4 of the tin.
Design the top with halved almonds and tutti fruity or whatever way you want to, but do this process immediately.
Place the tin in preheated oven and bake for 35 to 40 minutes @160°C or @320°F in the middle rack with both the rods on.
Once done, pass the cake through toothpick test and if succeeded, place the tin on cooling rack.
Let cake cool down a bit for about half an hour.
After the said time, invert the cake and let it cool completely.
Slice and enjoy.
