1 cup = 200ml

cooked rice

coconut
grated

tsp
mustard seeds / rai

cashews

urad dal/split & skinned black gram

tsp
chana dal/split chickpeas lentil

curry leaves

green chillies
slit

ginger paste
salt to taste

Instructions
Add oil in a pan and put mustard seeds. Let them splitter.
Add chana dal, urad dal and saute them on low heat till they slightly brown.
Now add green chillies, curry leaves and ginger. Saute till ginger turns slightly brown.
Add cashews and saute them too. Let them turn very light brown in colour.
Take grated coconut and add it to the pan. Saute on low heat for couple of seconds.
Then add cooked rice and salt. Mix well without mashing or breaking rice.
Coconut rice are ready. Enjoy hot
Notes
The rice must be completely cool, if you are making this recipe with the freshly made rice. Refrigerated one will be the best.
