Ingredients
  

1 cup = 200ml

  • 3 cup cooked rice
  • 1 cup coconut grated
  • 1 tsp mustard seeds / rai
  • 10-12 cashews
  • 1/2 tsp urad dal/split & skinned black gram
  • 1 tsp chana dal/split chickpeas lentil
  • 8-10 curry leaves
  • 2 green chillies slit
  • 1 tsp ginger paste
  • salt to taste
  • 1.5 tbsp oil

Instructions
 

  • Add oil in a pan and put mustard seeds. Let them splitter.
  • Add chana dal, urad dal and saute them on low heat till they slightly brown.
  • Now add green chillies, curry leaves and ginger. Saute till ginger turns slightly brown.
  • Add cashews and saute them too. Let them turn very light brown in colour.
  • Take grated coconut and add it to the pan. Saute on low heat for couple of seconds.
  • Then add cooked rice and salt. Mix well without mashing or breaking rice.
  • Coconut rice are ready. Enjoy hot

Notes

The rice must be completely cool, if you are making this recipe with the freshly made rice. Refrigerated one will be the best.
