Vegan Spinach rice | palak pulao | palak rice recipe

Ingredients
  

FOR SOAKING RICE

  • 1 cup rice
  • Water for washing
  • Water for soaking

FOR MAKING PUREE

  • 2 cup Spinach/palak
  • 2 green chillies
  • 1 bay leaf
  • 1 star anise
  • Small piece of cinnamon stick
  • 1 green cardamom
  • 2 cloves
  • Small piece of mace
  • 1 inch Ginger
  • 4 garlic cloves
  • 1/4 cup water

FOR COOKING RICE

  • Soaked Rice water drained
  • Spinach puree recently made
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 cup water

Instructions
 

SOAKING OF RICE

  • Wash rice 3 to 4 times until water gets clear.
  • Add water to rice and soak them for 30 minutes. Keep aside.

MAKING OF SPINACH PUREE

  • wash spinach leaves and add to blender.
  • Add rest of the ingredients mentioned under the head FOR MAKING PUREE.
  • Grind to fine puree. Keep aside.

MAKING OF PALAK PULAO

  • Add oil in pressure cooker.
  • Put cumin seeds and let them splitter.
  • Add roughly chopped onion and cook it till turns brown.
  • Now add spinach puree, coriander powder, garam masala and salt. Mix.
  • Cook it for 8 to 10 minutes or until puree begins to leave the sides of cooker.
  • Drain water from rice and add to pressure cooker.
  • Add water and mix.
  • Pressure cook for 2 whistles.
  • Spinach rice are ready.
  • Serve hot.
