Red sauce pasta also named as Arrabbiata is a pasta recipe cooked in a tomatoes based gravy and as pasta gets coated with red gravy/sauce due to cooking with tomatoes, it is named as red sauce pasta.

Ingredients
  

FOR BOILING PASTA

  • 150 gram pasta roughly 1.50 cup
  • 1/2 tsp salt
  • 1 tsp oil
  • 4 cup water

FOR RED SAUCE

  • 1 cup tomato puree
  • 2 tbsp garlic roughly chopped
  • 1/2 tsp red chilli flakes
  • 1 tbsp mixed herbs
  • 1/2 tsp oregano
  • 1/4 black pepper powder
  • 1 tsp dry basil leaves
  • 2 tbsp tomato ketchup
  • Salt to taste
  • 1 tsp sugar

Instructions
 

  • Pour water in a pan and add oil, salt & water.
  • When water begins to boil, add pasta in it.
  • Let pasta simmer for 7 - 8 minutes or until al dente cooked (cooked as to be still firm when bitten.)
  • While simmering, do stir it at intervals so that pasta doesn't stick to bottom.
  • Drain the water and keep the pasta aside.
  • In a pan add oil and garlic.
  • Let garlic turn golden brown.
  • Add tomato puree and let it cook on low flame.
  • In 8 to 10 minutes, when puree starts leaving the sides of pan, it means tomatoes are cooked.
  • Add red chilli flakes, black pepper powder, oregano, mixed herbs, dry basil leaves, tomato ketchup and sugar. Mix.
  • Add boiled pasta and salt. Mix well.
  • Red sauce pasta is ready. Enjoy

Notes

  1. Use firm and deep red tomatoes to make puree, otherwise pasta will have dull red colour.
  2. Don't use sour tomatoes otherwise pasta will turn out to be extra tangy.
  3. You may sprinkle some parmesan cheese/grated processed cheese on top.
